Carrot Cake
Ingredients
 
4 eggs
 
1 1/4 cups canola oil
 
2 cups white sugar
 
2 teaspoons vanilla extract
 
2 cups all-purpose flour
 
2 teaspoons baking soda
 
2 teaspoons baking powder
 
1/2 teaspoon salt
 
2 teaspoons ground cinnamon
 
3 cups grated carrots
 
1 cup chopped walnuts
 
1/2 cup Smart Balance spread
 
8 oz. cream cheese, softened
 
4 cups confectioners' sugar
 
1 teaspoon vanilla extract
 
1 cup chopped walnuts
Directions

Preheat oven to 350 degrees F.2.
 
Grease and flour a 9x13 inch pan.3.
 
In a large bowl, beat together eggs, oil, white sugarand 2 teaspoons vanilla.4.
 
Mix in flour, baking soda, baking powder, salt andcinnamon, then stir in carrots and fold in pecans.5.
 
Pour mixture into the prepared pan.6.
 
Bake for 40 to 50 minutes, or until a toothpick insertedinto the center of the cake comes out clean.
