Cardamom Fudge
Ingredients
1 cup (200 g) thick curd1 cup (200 g) loosely packed, freshly - made cottage cheese (paneer)6 tbsp (90 g) sugar, powdered2 cardamom, powdered2 tsp. (10 g) chopped nuts
Method
Hang the curd in a muslin cloth or put into a fine mesh strainer for 2 hours or till allthe whey has drained out.Blend the drained curd, paneer and sugar till smooth.Pour into a greased shallow dish.Sprinkle cardamom powder and nuts over it.At 100 percent power, microwave for 7 minutes, stirring only once after 2 minutes.Stand for 3 to 4 minutes.When cool, cut into squares.
