The seed or this book was planted a number o years ago, when I was teaching a cooking class inCaliornia. A woman raised her hand and conessed, “I can make one dish just fne, but when Ihave to orchestrate the rest o the meal so it all comes out at just the right time, I get ustered.”Since then I’ve given a lot o thought to her admission. It
is
stressul to pull o a multi-course, multidish meal. But, with perhaps the exception o the occasional holiday extrava-ganza, things really don’t need to be that complicated. A memorable dinner can be as simpleas bringing one beautiully complete dish to the table.This book eatures dozens o such dinners that will wow amily and guests, calm the cook,and, at the end o the night, impress the dishwasher. Regardless o the season, the amount o time you have to prepare the meal, or the number o guests you’ve invited, it’s easy to fnd arecipe here that’s perect or the occasion.I have to coness to a ondness or stews, which is why I include such a wide selection—or any time o the year. Many o the stews in this book, like Jerk Chicken Chili and BraisedLamb Shanks with Tomatoes, Aromatic Vegetables, and White Beans, are classic all or winterevening are, but there are plenty o stews or other seasons as well. Coq au Vin Blanc withSpring Vegetables and Salsa Verde Chicken with Herbed Cornmeal Dumplings are ideal orspring, while Spicy Coconut Shrimp Stew with Tomatoes and Cilantro and Carnita-Style Bee with Roasted Peppers and Onions (or a rockin’ taco party) are both great or summer.The possibilities go ar beyond stews. Jazz up your next dinner with a decidedly un- American casserole. Doable, Delicious Paella is one o my avorites, as is One-Pot Penne withTurkey-Feta Meatballs—the pasta cooks right in the sauce.
