And they can’t stop raving about hisdelectable Spencer Four Seasons cake, which is made of chocolatecake, choc mousse, choc biscuit and ganache, one layered on top of the other.Meet Cheng Yi a.k.a. Fatboybakes, a realtor by day and a baking junkieby night. How on earth did he get into baking? It all started as a favour for a friend but has since evolved into a thriving side business for Cheng who whips up cakes, pies, tarts, scones and tortes on request.“When you bake for friends, and they
with appreciationand tell you, ‘Oh, you should start selling’, you usually just dismiss it,”says Cheng, 44, a civil engineer by training.But one evening, a friend rang him and requested two “emergency”cakes for her restaurant. Apparently, the press were dropping in toreview her restaurant the next day, and she didn’t have dessert.“I told her I don’t sell my cakes, and I was at a formal black tie eventwhen she called,” recalls the father of four. But Cheng relented andstopped at the 7-Eleven on his way home to grab some eggs. Hewhipped up a lemon tart and orange mocha brownie that day. The rest,as they say, is history.
