Brownie Cheesecake Torte
This doubly delicious recipe is surprisingly low-fat.Ingredients15 1/8 oz. low fat fudge brownie mix2 tsp. instant coffee granules1/2 tsp. cinnamon, ground4 oz. carrot baby food, 1 jarCooking spray1/2-C. sugar2 Tbs. sugar4 tsp. all-purpose flour1-tsp. vanilla extract8 oz. Neufchatel cheese, softened (block)8 oz. fat free cream cheese, softened (block)2 large egg whites3 Tbs. skim milk, divided2 Tbs. unsweetened cocoaChocolate syrup (optional)Fresh raspberries (optional)DirectionsPreheat oven to 425 F. Combine first 4 ingredients in a bowl. Firmly press mixture into bottomand up 1 in. sides of a 9 in. spring form pan coated with cooking spray. Set aside. Combine 1/2C. sugar, flour, vanilla, and cheeses. Using mixer, beat at medium speed until well blended. Addegg whites and 2 Tbs. milk and beat well. Combine 1/2 C. batter, 1 Tbs. milk, 2 Tbs. sugar, andcocoa in a small bowl; stir well. Spoon remaining batter alternately with cocoa mixture intoprepared crust. Swirl together using the tip of a knife. Bake at 425 for 10 minutes. Reduce oventemperature to 250 F and bake 45 minutes or until almost set. Cool completely on a wire rack.Garnish with chocolate syrup and fresh raspberries, if desired.
