Chicken curry
Ingredients:
‘1kg chicken pieces
1 chopped onion
2 chapped tomatoes
2 chopped medium
potatoes (fry the
potatoes and set aside)
1 tbsp chopped fresh
ginger
‘1 thsp chopped fresh
garlic
3 bay leaves
4 tbsp red chili powder
3 tbsp masala or medium
curry powder
21sp ground turmeric
1 hanaful chopped fresh
coriander
Scloves
2 cinnamon sticks
‘tsp freshly ground
black pepper
saltto taste
coriander leaves for
gamish
3—4tbsp of oil
1. Clean the chicken pieces and set aside.
2. On a low heat, heat the oil in a thick-bottomed pan
and add the bay leaves, ginger and garlic, Stir for 2 to
3 minutes
3. Add the onion and fry until golden.
4, Add the chili powder, cloves, black pepper,
cinnamon stick, masala (or curry powder), salt and
turmeric, and stir for § minutes on a medium heat
5. Add the tomatoes and chopped coriander and stir
well
6. Now add the potatoes and chicken pieces and stir
continuously for 10 minutes.
7. Add a little water, cover with a lid and let the pan
simmer for 18 to 20 minutes on a medium heat
8. Finally, remove the lid and eook until there is a little
water Left
9. Garnish with coriander leaves and serve with hot
rice, chapattis or naan bread
