Esta sidra se elabora por métodos tradicionales con mezcla de manzanas tipicamente
asturianas, atendiendo a sus caracteristicas onganolépticas y tecnolégicas (dulees, amarges y acidas)
y muy apropiadas para la elaboracion de sidra por su rigueza aromélica, La side natural asi
obtenida, se completa con una clarificacién, filtracién tangencial por membrana ceramica,
estabilizacién biolégica mediante microfiltracién y una carbonatacién que da lugar a una sidra
espumosa, con formacién de rosarios de gran finura en las burbujas, proporcionando una perfecta
conjuncién de aromas y sabores.
“El Gaitero Spanish Cider” is elaborated by traditional methods mixing cider apples. These are
chosen attending to their organoleptic and technological characteristics (sweet, bitter and acid)
‘These apples are very suitable for the produetion of cider by their aromatic wealth, We obtain a high
quality juice. After a slow alcoholic fermentation to low temperature, we obtain the natural cider
base.
The process is completed by a clarification, tangential filtration by ceramic membrane, biological
stabilization by means of microfiltraion and an addition of CO2.
The final product is a sparkling cider, with slightly persistent foam, very fine and continuous bubbles
and a perfect conjunction of flavours and aromas.
