Chickpeas/Beans With

Rice______________________________

Ingredients:
- 1 can (19 oz) chickpeas or kidney beans
- olive oil
- 1 ½ tsp garlic powder
- 1 ½ tsp onion powder
- ¼ tsp cumin powder
- ¼ tsp cinnamon powder
- ½ tsp paprika
- ¼ tsp ginger powder
- ¼ tsp black pepper
- Dash of cayenne pepper
- 1 ¼ tsp salt
- ½ cup crushed tomatoes
- 1 large potato
- 1 tbsp lemon juice
- 1 tbsp lime juice
- Chopped cilantro (optional)

Directions:
1. Heat oil in pan
2. Add tomatoes, potatoes, chickpeas/beans, and 1 cup water
3. Add everything else except for cinnamon, salt, cilantro, and
lemon/lime juice
4. Cook on medium (covered) for 20 minutes
5. Add cinnamon, salt, cilantro, and lemon/lime juice
6. Serve over rice

Chicken Parmesan_____________________________________

Ingredients:
- 2 chicken breasts
- 1 egg white
- Italian bread crumbs
- Tomato sauce (jar sauce or crushed tomatoes)
- Mozzarella cheese

Directions:
1. preheat oven to 350 degrees
2. Dip chicken breasts in egg whites
3. Roll chicken breasts in bread crumbs
4. Bake chicken for 20 minutes
5. Spread tomato sauce over chicken and sprinkle cheese
6. Bake for 5 additional minutes

Chickpea
Sandwiches___________________________________

Ingredients:
- 1 can (19 oz) chickpeas
- 1 stalk of celery (chopped)
- ¼ large onion or ½ medium onion (chopped)
- 1 tbsp mayo
- 1 tbsp lemon juice
- 1 tsp dried dill weed (optional)
- Chopped garlic
- 1 tbsp Dijon mustard
- Salt and pepper

Directions:
1. Mash chickpeas until paste
2. Add everything else and stir
3. Serve on flat bread

Baked Dijon Salmon
Fillets_______________________________

Ingredients:
- 2 salmon fillets
- Salt and pepper
- Dijon mustard
- Italian bread crumbs
- 2 cloves chopped garlic
- 1 tbsp melted butter

Directions:
1. preheat oven to 375 degrees
2. season salmon with salt and pepper
3. spread thin layer of Dijon mustard over salmon
4. sprinkle garlic and drizzle with melted butter
5. sprinkle bread crumbs on top
6. Bake for 25 minutes

Honey Roasted Red Potatoes____________________________

Ingredients:
- 4 red potatoes
- 1 clove chopped garlic
- 1 tbsp melted butter
- 1 tbsp honey
- ½ tsp dry mustard
- Salt and pepper

Directions:
1. Preheat oven to 375
2. Place cut potatoes in single later on baking dish and top with garlic
3. Mix butter, honey, mustard, and salt and pepper in bowl

4. Drizzle mixture over potatoes
5. Bake for 40 minutes, stirring halfway through

Penne with Chicken and Pesto___________________________

Ingredients:
- ½ box of penne pasta
- Butter or olive oil
- 2 chicken breasts (cut into strips)
- ¾ cup heavy cream/light cream/half and half
- ¼ cup pesto
- 2 tbsp grated parmesan cheese
- Salt and pepper

Directions:
1. Heat butter/olive oil in pan over medium heat
2. Add chicken breasts and chopped garlic
3. After chicken is mostly cooked, add cream, pesto, cheese, salt and
pepper and reduce heat to low
4. Simmer for 5-10 minutes
5. Serve over penne pasta

Vodka Cream
Rigatoni__________________________________

Ingredients:
- ½ box of rigatoni pasta
- 1 ½ cups crushed tomatoes
- ½ cup heavy cream/light cream/half and half
- 1/3 cup vodka
- 2 tbsp grated parmesan cheese
- Salt and pepper
- Chopped garlic
- 1 tbsp olive oil

Directions:
1. Heat olive oil in pan over medium heat
2. Add garlic and vodka, simmer until vodka is evaporated
3. Add cream, tomatoes, cheese, salt, and pepper
4. Simmer for 10 minutes on low heat
5. Serve over rigatoni pasta

15-Minute Marinated
Chicken____________________________

Ingredients:
- 2 chicken breasts
- 2 tbsp Dijon Mustard
- 1 tbsp lemon juice
- 1 tsp Worcestershire sauce
- ¼ tsp tarragon
- Salt and pepper

Directions:
1. Mix everything together in container
2. Coat each chicken breast and put them in container
3. Let marinade for 15 minutes or overnight in fridge
4. Grill or pan fry chicken
5. Serve with rice

Dijon Tarragon Cream
Chicken___________________________

Ingredients:
- 1 tbsp olive oil
- 2 chicken breasts
- ¼ cup cream or half and half
- 2 cloves chopped garlic
- 2 tsp tarragon
- 1 tbsp Dijon mustard
- Salt and pepper

Directions:
1. Heat oil in pan on medium heat
2. Season chicken with salt and pepper and add to pan
3. Cook chicken for 10 minutes
4. Stir in cream, mustard, and tarragon and let simmer for 5 minutes
5. Serve with fettuccine

Italian Baked
Chicken___________________________________

Ingredients:
- 2 chicken breasts
- ¼ cup mayo or 1 egg white
- 2 tbsp parmesan cheese
- ¼ tsp garlic powder
- ¼ cup Italian bread crumbs

Directions:
1. Preheat oven to 425
2. Mix bread crumbs, cheese, and garlic powder in bowl
3. Dip chicken in mayo or egg whites, then into bread crumb mixture
4. Bake for 20 minutes

Mexican Chicken and

Ingredients:
- 2 chicken breasts
- ½ cup salsa
- ½ cup shredded cheese
- 2 cloves chopped garlic
- ¼ tsp cumin
- Salt and pepper
- 1 tbsp olive oil

Directions:
1. Preheat oven to 375 degrees
2. Heat oil in pan on medium heat
3. Season chicken with salt, pepper, and cumin and sauté in pan with
garlic until brown on both sides
4. Transfer chicken to baking dish and top with salsa and cheese
5. Bake for 15 minutes
6. Top with dollop of sour cream (optional) and serve over rice

Chicken Tacos________________________________________

Ingredients:
- 4 tortillas (medium size)
- 3 chicken breasts (cut into small pieces)
- Olive oil
- 1 tbsp lime juice
- 1 tbsp lemon juice
- 2 tsp Worcestershire sauce
- Taco seasoning (recipe below)
- shredded cheese, salsa, lettuce and tomatoes (optional)

Directions:
1. Heat oil in pan
2 . Combine chicken, lemon and lime juice, and Worcestershire sauce
3. Season with taco seasoning
4. Cook for 10-15 minutes
5. Warm tortillas in microwave for 30 seconds
6. Serve with shredded cheese, salsa, or any other toppings

Ingredients:
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp oregano
- ½ tsp paprika
- 1 ½ tsp cumin
- 1 tsp salt
- 1 tsp black pepper

Chicken and Rice Stir-

Ingredients:
- 2 chicken breasts (cut into small pieces)
- 1 cup uncooked brown rice
- 2-3 cloves chopped garlic
- 2 scrambled eggs
- 2 cups frozen broccoli florets
- 2 tbsp Worcestershire sauce
- salt, pepper, garlic powder, onion powder, cumin, paprika, cayenne
- Olive oil

Directions:
1. Cook rice and broccoli in other pans
2. Heat olive oil in large pan when there is 15-20 mins left on rice
7. Add chicken and season liberally with all spices
8. Sauté chicken for 10 minutes, removing it to scramble eggs
9. Stir in cooked broccoli, chicken, and rice and sauté for 5 minutes
