Chickpeas/Beans WithRice______________________________ 
Ingredients:
-
1 can (19 oz) chickpeas or kidney beans
-
olive oil
-
1 ½ tsp garlic powder
-
1 ½ tsp onion powder
-
¼ tsp cumin powder
-
¼ tsp cinnamon powder
-
½ tsp paprika
-
¼ tsp ginger powder
-
¼ tsp black pepper
-
Dash of cayenne pepper
-
1 ¼ tsp salt
-
½ cup crushed tomatoes
-
1 large potato
-
1 tbsp lemon juice
-
1 tbsp lime juice
-
Chopped cilantro (optional)
Directions:
1. Heat oil in pan2. Add tomatoes, potatoes, chickpeas/beans, and 1cup water
3.
Add everything else except for cinnamon, salt,cilantro, and lemon/lime juice
4.
Cook on medium (covered) for 20 minutes5. Add cinnamon, salt, cilantro, and lemon/lime juice6. Serve over rice

Ingredients:

2 chicken breasts
-
1 egg white
-
Italian bread crumbs
-
Tomato sauce (jar sauce or crushed tomatoes)
-
Mozzarella cheese
Directions:
1. preheat oven to 350 degrees2. Dip chicken breasts in egg whites3. Roll chicken breasts in bread crumbs4. Bake chicken for 20 minutes5. Spread tomato sauce over chicken and sprinkle cheese6. Bake for 5 additional minutes

Ingredients:

1 stalk of celery (chopped)
-
¼ large onion or ½ medium onion (chopped)

1 tbsp mayo
-
1 tbsp lemon juice
-
1 tsp dried dill weed (optional)
-
Chopped garlic
-
1 tbsp Dijon mustard
-
Salt and pepper
Directions:
1. Mash chickpeas until paste2. Add everything else and stir3. Serve on flat bread
