This course gives the students the understanding of the direct connection between the health of the earth, growing our own life-giving foods, and our resulting health and well-being. The practices of gardening sustainably and careful site analysis are covered. How to grow nutrient-rich vegetables, fruits, herbs, and wild edibles and their many health benefits are included. The creation of garden retreats and sanctuaries in the home landscape and the ways that they improve and sustain health are covered as well. Foodies are welcome!
