Kandungan Nutrisi Daging Kambing *)

Salah kaprah tentang daging kambing sudah terlanjur terjadi di tengah-tengah masyarakat. Daging
kambing dituding sebagai biang dari penyakit. Benarkah demikian? Berikut adalah fakta nutrisi
daging kambing :

Daging kambing memiliki kandungan lemak total, kolesterol, lemak jenuh (saturated fat) yang
lebih rendah jika dibandingkan dengan daging lain pada umumnya. Kandungan protein daging
kambing hampir sama dengan daging lainnya, akan tetapi daging kambing memiliki karakterisik
yang khas dalam hal lemah jenuh dan kolesterol.

Daging kambing memiliki kandungan lemak jenuh yang lebih rendah dan kandungan yang lebih
tinggi lemak mono dan polysaturated nya. Hal ini dapat dilihat apabila setelah daging kambing
dimasak akan terlihat lebih banyak cairan lemak yang keluar menetes.

Kandungan lemah jenuh yang lebih rendah ini dan juga kandungan kelesterolnya yang lebih
rendah menunjukkan bahwa daging kambing itu sehat. Disamping itu daging kambing memiliki
kandungan iron, potassium dan thiamine yang lebih tinggi, dilain pihak kandungan sodiumnnya
lebih rendah dibandingkan dengan daging lain.

Hasil analisa menunjukkan bahwa daging kambing memiliki lemak 50% lebih rendah
dibandingkan dengan daging sapi dan 45% lebih rendah dibandingkan dengan daging domba, akan
tetapi rasanya masih tetap enak.
