EVOO
(extra-virgin olive oil), plus a drizzle1 pound
ground chicken

Preheat the oven to 425°F.Coat your hands and the work surace with a littlecornmeal or four and, using your hand or a rolling pin,orm a 14-inch round pizza. Place the pizza on a pizza bak-ing tray and prick the dough with the tines o a ork inseveral places. Drizzle a little bit o EVOO over the doughand place it in the oven. Bake it or 10 minutes.Meanwhile, heat a deep skillet over medium-highheat with the 2 tablespoons o EVOO, 2 times aroundthe pan. Add the meat and brown it, breaking it up witha wooden spoon. To the browned meat, add the garlicand onions and season them with salt and pepper. Cookthem together or 5 to 6 minutes, then add the parsley, redpepper fakes, oregano, and tomato sauce. Heat the saucethrough.Remove the pizza rom the oven ater 10 minutesand top it with the meat sauce, then scatter the cheesesover all. Return it to the oven and bake it until it’s goldenand bubbly, another 10 to 12 minutes. Top the pizza withshredded basil, cut, and serve.
