 Easy Peasy Recipe Sheet 
 --------------------------------------Lemon Coconut Cupcakes
This recipe requires some assembly but it is worth the effort. The combination of lemonand coconut, with a burst of curd filling isrefreshing and delightful!
Cupcake Ingredients
 
 
¾ cup butter, softened
 
1 cup sugar
 
½ tsp vanilla extract
 
1 ½ cup flour
 
½ tsp baking powder
 
½ tsp baking soda
 
¼ tsp salt
 
½ cup sour cream
 
2 eggs
 
½ cup dessicated coconut
 
3 tbsp lemon zest
Method
1.
 
In a large bowl, cream butter and sugaruntillight and fluffy. Add eggs one at atime. Stir in lemon zest and vanilla.2.
 
Combine flour, baking powder and baking soda and salt; sift and combinein the creamed mixture alternately  with sour cream. Beat until combine;fold in coconut.3.
 
Fill paper-lined cups ¾ full. Bake atpre-heated oven at 175 degree Celsiusfor 20 minutes.
Lemon Curd Ingredients
 
¾ sugar
 
2 tbsp cornstarch
 
1 beaten egg yolk 
 
3 tbsp lemon juice
 
1 tsp lemon zest
 
1 tbsp butter
 
½ cup water
 
Pinch of salt
Method
1.
 
In a saucepan, mix sugar, cornstarchand a pinch of salt. Add water. Egg yolk and lemon juice. Stirringconstantly using a whisk, cook overmedium heat till thick. Always stir it toavoid curdles.2.
 
Remove from heat; add lemon zest and butter. Set aside.
Frosting Ingredients
 
1 cup cream cheese, softened
 
3 tbsp butter, softened
 
¼ tsp vanilla extract
 
1 ¼ cup icing sugar
 
½ cup dessicated coconut
 
¼ tsp yellow colouring
 
3 tbsp lemon juice
Method
1.
 
Beat cream cheese, butter, colouring,lemon juice and vanilla until fluffy.Gradually beat in sugar until smooth.
