The following recipes were collected from various sources and compiled here as acompanion to our geography lesson plans. I have not tried any of these recipes so Ican’t tell you if they are good, bad, or need work. Use as you see fit. Side note – I don’tplan on actually making ALL of these recipes :0) I just wanted to have ideas on hand!
 
CANADA
Poor Man’s Pudding1 cup white sugar4 tsp baking powder1 cup milk2 cups flour1 tsp salt4 cups apples, chopped fineSauce:1 cup brown sugar1 Tbsp butter2 ½ cups boiling waterMix batter ingredients in a large bowl and place in a deep round baking dish. Mix thesauce and pour over the top. Bake 30 minutes at 375 until nicely browned.Blueberry Grunt1 ½ cups blueberries1 2/3 cup water2/3 cup sugar¼ tsp salt1 ¼ tsp baking powder1 1/3 cups flour1 Tbsp butter1/3 cup milkMix berries, water and sugar in a casserole dish and bake at 400 for 5 to 10 minutes, oruntil berries soften and juices develop. Mix remaining ingredients into a dough and dropby spoonfuls onto berries. Grease an 8 inch square baking dish. Using a mixer, beat thebutter and sugar together. Then beat in the eggs. Combine flour, baking powder, salt,and cinnamon. Add half the flour mixture to the butter mixture and mix. Then add halfthe milk and mix, the rest of the flour and mix, and finally the rest of the milk and mix wellfor a minute or so. Using a rubber spatula, fold in the berries gently. Pour the batter intothe pan and bake for 40 to 45 minutes, or until cake is lightly browned and springs backwhen pressed lightly in the center. Let cool completely. To make the icing combine thecream cheese, butter, vanilla and powdered sugar. Spread on the cake.
 
THE UNI TED STATES 
Beef Stew4 Tbsp oil2 onions, chopped4 large carrots, thickly sliced3 lb braising steak, cubed3 Tbsp flour3 cups beef stock1 cup strong coffee2 tsp dried oregano1 bay leaf4 oz fresh or frozen peasSalt and pepperMashed potatoes, for servingHeat 2 tablespoons of oil over medium heat in a large pot and add the onion andcarrot. Cook for about 8 minutes, until lightly browned. Remove with a slotted spoonand reserve. Add another 1 tablespoon of oil to the pot then add the meat. Increaseheat to medium-high and cook until browned. Season with salt and pepper. Return theonions and carrot to the pot and add the flour and remaining oil. Cook for 1 minutes,stirring constantly. Add the stock, coffee, oregano and bay leaf. Bring to a boil andcook, stirring often, until thickened. Reduce heat to low, cover and simmer gently for 1to 1 ½ hours. Add the peas and simmer for 5 to 10 minutes more. Discard the bay leafand taste for seasoning. Serve with mashed potatoes.Pennsylvania Dutch Fried Tomatoes8 oz large firm red tomatoes3 Tbsp flour4 Tbsp butter or bacon drippings4 slices of hot buttered toastSalt and pepperSlice tomatoes into ½ inch rounds and coat lightly with flour. Heat butter in a frying pan.When hot add the tomato slices and cook until browned, turning them to brown theother side, for another three or four minutes and season with salt and pepper.
