How To Make Turkey Pastrami
Turkey Pastrami recipe. Usually made from beef, this recipe for turkey pastrami is a leaner alternative to the famous deli meat. First marinated andthen smoked, this pastrami will taste as authentic as what you would find in downtown New York.
You will need:
2turkey breasts, with skin onfor the brine:100 gbrown sugar100 gcoarse salt1 Tbspblack peppercorns1 tspmustard seeds4garlic cloves2bay leaves1 Tbsp juniper berries, crushed1 ½ ltrwaterfor the dry rub:1 Tbspground coriander1 Tbsppaprika1 Tbspgranulated garlic1 Tbsponion powder2 Tbspdried thyme1smokersome paper towel1saucepan1spoon1plastic container1pair of tongs1tray
Prepare the brine
Place the brown sugar into a saucepan. Add the salt, peppercorns, mustard seeds, garlic cloves, juniper berries, bay leaves and thewater. Bring it to a brisk boil. Remove it from the heat and let it cool completely.
Marinate the breasts
Place breasts into container. Cover them with the brine. Make sure they are totally submerged in the marinade. Seal it well and store inthe fridge for a minimum of 48 hours.
