Jambalaya

Ingredients:
3 small onions - chopped 3 garlic cloves minced 3 tablespoons butter pound of fully cooked smoked sausage cut into inch slices 1 cups of chicken broth 1 cups canned diced tomatoes with juices cup chopped green pepper 3 bay leaves teaspoon of dried thyme 3 dashes of cayenne pepper cup uncooked long grain rice 1 cups cubed cooked chicken cup of mushroom slices

Directions:
In a skillet, saut onion, garlic, bell pepper, and mushroom until crisp-tender. Add the sausage, broth, tomatoes, bay leaf, thyme, and cayenne. Bring to a boil and add rice. Reduce heat, cover, and simmer for 15 minutes. Add chicken and sausage. Cook for 15 5 10 minutes more or until rice is tender. Discard bay leaves before serving.
