Smoked mackerel and horseradish pate on crostini and red onion Confit
Farmers markets are a great symbol of social regeneration. By shopping and discovering new produce and producers, we can play our role in supporting the local economy while keeping old traditions alive. Very often these markets are colourful and represent a selection of foods and drinks only local to the area, thus becoming a pop up tourist attraction. The recipe below, is a quick snack, and can easily be enjoyed as a sandwich filling, where the smokey oiliness of the mackerel (a sustainable fish),is matched with the spiciness of the horseradish and the sweetness of the red onion marmalade.

Ingredients

1 Kg Smoked Cornish Mackerel filet 1 Jar Red Onion Marmalade 5 Lemons 250 ml of Cornish crme Fraiche 1 Plain Olive oil focassia 1 Bunch Fresh Coriander leaves 1 small tub creamed Horseradish sauce Pinch of Cornish sea salt

Instructions

Flake the smoked mackerel filets into a large bowl (discard the skin and bones.)Blend in the Crme Fraiche and two table spoons of creamed horseradish, and freshly chopped coriander leaves. Refrigerate overnight. Slice the Olive oil focassia bread into bite size chunks, and top with a spoonful of red onion marmalade. Top the crostini (bread bites) with a spoonful of mackerel pt, and a slice of lemon, and a pinch of Cornish sea salt.
