3/4 cupsall-purpose flour,divided, plus more for work surface
 
3 teaspoons baking powder
 
1/2 teaspoonbaking soda
 
1 teaspoon salt
 
2 tablespoonsshortening,cold
 
1 cup buttermilk

CHICKEN POT PIE WITH A BISCUITTOP
 
2 lbs chicken tenders, cut into 1 inch pieces
 
1 ½ tsp salt
 
¾ tsp ground black pepper
 
1 tbsp olive oil
 
3 tbsp unsalted butter
 
1 lb button mushrooms, stemmed and quartered
 
1 ½ cups small-diced onion
 
¾ cup small-diced carrot
 
¾ cup small-diced celery 
 
1 tbsp minced garlic
 
¼ cup all-purpose flour
