As it ages Champagne tends to lose its obvious fruit, which is replaced by subtle nutty tones and subdued elements of dried fruits. On the nose, the wine is rich with yeasty, bready notes. One the palate, the initial impression is of red fruits which then turns into crisp citrus and honey notes. The finish is crisp and clean. Champagne deutz brut classic 375ml, France Bringing fresh white stone fruit, crispened with grapefruit, lime and a delicate aperitif character. On the nose, the wine is rich with yeasty, bready notes. One the palate, the initial impression is of red fruits which then turns into crisp citrus and honey notes. Chteau Paveil de Luze, Margaux, France Has berry and tobacco notes, but turns a little herbal, with light fruit and berry character. Vasse Felix Cabernet Merlot, Margaret River, Australia The bouquet has a mix of blackberry, spicy, cedary aromas, the palate with cassis fruit at its core which has opened up its inherent sweetness; subtle oak, fine tannins and a long, gently spicy finish. Chteau Citran, Haut Medoc, France Shows blackberry and currant aromas, with a hint of sweet tobacco. Full-bodied, with soft, silky tannins and a long, fruity finish. A pretty wine. Yalumba 'The Menzies' Cabernet Sauvignon, Coonawara, Australia Lithe, generous and deftly balanced to play its ripe blackberry and currant flavors against hints of wet earth and bay leaf. The finish slides elegantly through refined tannins and a hint of charred meat. Chteau Chasse-Spleen, Moulis en Medoc, France Big and chewy. Impressive. Dark ruby-colored, with cocoa, coffee and chocolate aromas covered by ripe fruit. Full-bodied and very rich, showing lots of chewy tannins and a long, roasted coffee and berry aftertaste. B.P de Rothschild Almaviva, Concha Y Toro, Chile Dense but racy, thanks to plenty of fine-grained tannins that carry the shaved vanilla bean, black currant paste, fig and loam notes through a superlong finish. Additional tobacco and cedar hints chime in on the finish. Really well-built, showing a Maipo profile with a Bordeaux-like structure.

Nautilus Pinot Noir, Marlborough, New Zealand Presents a concentrated, lithe core of Asian spice, tangy wild berry and sour cherry pie flavors. Stone, dried thyme and cedary oak notes weave through the streamlined tannins, and spiciness lingers. Joseph Drouhin Vosne Romanee, Bourgogne, France Gorgeous, supple and packed with fruit; dark-colored and thicktextured, with lively aromas and succulent flavors. It mingles faded roses, cassis, wild strawberries and raspberries and a bit of wet earth. Long, succulent, balanced finish. Deloach O.F.S Pinot Noir Russian River Valley, USA This superb example of russian river valley pinot noir was created completely by hand in small open top fermentors using native yeasts.
