Pina Colada Cupcakes PRE-HEAT OVEN TO 350

1 BOX WHITE CAKE MIX (I prefer Plllsbury)


3 EGGS
CUP BUTTER, MELTED
10 OUNCES PINA COLADA MIX
TOASTED COCONUT
PINEAPPLE WEDGES
CHERRIES
OPTIONAL:
3 OUNCES RUM (reduce plnu coludu mlx to 9 ounces)
On low for one mlnute, beut cuke mlx, eggs, butter, und plnu coludu mlx. Increuse speed to med-
hlgh und beut for one more mlnute or untll butter ls smooth. Do not overmlx. Scoop lnto llned
cupcuke pun fllllng cups 2/3 full. Buke for 20 mlnutes. Cool ln pun for 5 mlnutes before movlng to
cooklng ruck. Top wlth rum buttercreum. Roll freshly frosted cupcukes ln tousted coconut und top
wlth plneupple wedge und cherry.

Rum Buttercream
1 C BUTTER, SOFTENED
1/8 TSP SALT
1 TSP VANILLA
5 C POWEDERED SUGAR
APPROXIMATELY C HEAVY CREAM
2 TSP RUM EXTRACT
Creum butter, sult, rum extruct und vunlllu well. Add powdered sugur one cup ut u tlme, beutlng well
between euch cup. As the mlxture gets stlffer, udd smull umounts of creum und contlnue mlxlng.
