Vegetable oil, for pan ˙ teaspoon coarse salt


1 cup fine yellow cornmeal, preferably 1 cup buttermilk
­stone-­ground ˙ cup milk
© cup ­all-­purpose flour 1 large egg, lightly beaten
π cup sugar 2 tablespoons unsalted butter, melted
1 teaspoon baking powder and cooled
˙ teaspoon baking soda © cup chopped canned jalapeños

1 Preheat oven to 425°F. Lightly oil an 8-inch ­cast-­i ron pan and heat in oven. Meanwhile,
whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt in a large
bowl. Combine buttermilk, milk, and egg; add to cornmeal mixture and whisk to
combine. Add melted butter and jalapeños, whisking to incorporate.

2 Remove pan from oven and pour in batter (it will sizzle). Bake until dark golden
around the edges and set in center, 25 to 30 minutes. Let cool slightly in pan before
cutting into squares or wedges. Serve warm or at room temperature.

Grilled Green Beans wi th Ha r i ss a
Most foods are improved by proximity to charcoal and smoke, and that includes those that
dangle from beanstalks. The only trick is not losing half of your green beans to the fire, a job
made easier with one of those mesh cages for grilling smaller foods. Me, I just do my best to
keep them perpendicular to the grates and have my average losses down to about three beans.
A quick toss in a vinaigrette spiked with spicy North African chile paste, aka harissa, really
livens things up; in a pinch, you could use the same amount of Sriracha, or just Tabasco with a
chopped garlic clove. Or, if you prefer, skip the heat—these are still really good.

Serves 4 salt. Add the beans and blanch until just crisp-tender,
Kosher salt 2 to 4 minutes. Drain, and plunge the beans into the
1 pound green beans, trimmed ice water for 2 minutes to stop the cooking. Drain the
beans, and pat dry with kitchen towels.

My first love has always been
food, but in the search for ever

Air Garden
The San Francisco flower markets are
the best in the country—and Megan has
quite the green thumb. But thanks to a
grueling work schedule and nonexistent
outdoor space, having a garden was
out of the question. Even houseplants
were too much of a commitment at this
point. I wanted her to have the option of
indulging in the city’s rampantly available
fresh flowers when possible, though,
so I constructed a pseudo-chandelier
above the dining room table with fishing
line and glass bubble vases from CB2.
When empty, they caught the sunlight
and almost looked like lightbulbs. When
filled with flowers, they were simply
stunning. In either case, they helped
ground the bistro dining table, so it had
a sense of permanency. Plus, with such
a small tabletop, there was no surface
space to spare come dinnertime, so this
saves Megan from ever having to waste
room on a centerpiece again—she now
has a go-to floating one at the ready.
