ACHIEVEMENTS
OF

Professor Dr. Soottawat Benjakul


Professor Dr. Soottawat Benjakul graduated from Prince of
Songkla University in 1989 with second class honors in Agro-Industry
and, in 1991, obtained his M.Sc. in Food Technology from the same
university, where he started his career as a lecturer in the Department
of Agro-Industry. In 1994, he was awarded a Fulbright scholarship
to pursue a Ph.D. in Food Science and Technology at Oregon State
University and, in 1997, he returned to Prince of Songkla University,
where he has continued to teach and conduct research.


Professor Dr. Soottawat Benjakul has
concentrated his research on seafood and
seafood products and has pursued both basic
and applied research, building up a formidable
bank of knowledge which has subsequently
been used to solve problems encountered by
the seafood processing industries. His research
has been devoted to improving the quality of
seafoods and seafood products as well as
developing post-harvest technologies. His research
also covers the utilization of seafood processing
byproducts, thereby alleviating environmental
pollution. He has received grants from national
and international grant-making agencies, including
the Swedish International Foundation for Science,
the National Research Council of Thailand, The
Thailand Research Fund, the National Center
for Genetic Engineering and Biotechnology as
well as Prince of Songkla University itself. He
has also joined the JSPS-NRCT Core University
Program between Tokyo University of Marine
Science and Technology and Kasetsart University
and he has collaborated with many outstanding
foreign scientists under the Royal Golden
Jubilee Ph.D. Program. His research on seafood
science and technology can be categorized as
follows:
1. Seafood enzymes

Different enzymes associated with the
decline in the quality in seafoods have been
identified and characterized. This research has
investigated proteinases, involved in the softening
of fish muscle and the weakening of fish protein
gel, and polyphenol oxidase, which causes
melanosis, or blackening, in shrimp. His research
has also examined the inhibition of polyphenol

oxidase through the use of alternative additives.


Research into trimethylamine-N-oxide demethylase
revealed that it plays a role in protein
denaturation and texture toughening in some
fish species, including, for example, lizardfish.
Other areas of research include the use of
transglutaminase as a protein cross-linker in
surimi or gel products and the purification and
characterization of proteinases, for example
pepsin and trypsin from fish viscera and shrimp
hepatopancreas.
2. Utilization of seafood processing
by-products

Value-added products, including collagen
and gelatin, have been produced and characterized
in Professor Soottawats laboratory. Fish pepsin
has been used to increase the extraction
efficacy of collagen and gelatin from different
sources, including fish and cuttlefish skin. Protein
hydrolysate from fish skin and the flesh of
underutilized species, which promote bioactivities
such as antioxidant activity and ACE inhibitory
activity, has also been investigated. The use
of fish protein hydrolysate as a fish peptone
has been accomplished and the preparation of
protein hydrolysate with negligible fishy odor
or flavor, which can be used as the food
supplement, is currently under investigation, as
is the recovery of proteinases from fish viscera
using the aqueous two phase system (ATPA)
and their subsequent use in the production of
protein hydrolysate for the tenderization of meat.
In addition, the fish oil and phospholipids from
tuna head and roe and shrimp cephalothorax
have been extracted and characterized in his
laboratory.

3. Functional properties of seafood proteins



The functional properties of seafood
proteins including gelation, film formation, and
emulsifying properties have been extensively
studied in Professor Soottawats laboratory.
Surimi gelation mechanisms and the factors,
both extrinsic and intrinsic, involved in gel
formation have been elucidated and, additionally,
improvements in surimi gel through the use
of alternative natural additives such as protein
plasma and transglutaminase have been made,
as have improvements in the gel properties
of surimi produced from frozen fish. More
recent projects have included the preparation
of edible protein-based film using low-value
pelagic fish and fish gelatin and the modification,
to maximize their functional properties, of proteins
from different sources using plant phenolic
compounds and oxidizing agents. Two areas
currently under investigation are the development
of a washing process to obtain (from dark-fleshed
fish) surimi with improved gel and storage
properties and the use of protein isolate from
indigenous legume seeds as protein additives
in surimi.
4. Alternative additives and shelf-life extension
of seafoods

In this area of research, phenolic
compounds have been used as gel enhancers.
The uses of phenolic compounds as antioxidants,
antimicrobials and anti-melanosis have been
intensively studied, as have alternatives to
phosphate compounds for use as substitutes
in seafoods, especially in shrimps. Different
preservative techniques have also been used
to extend the shelf-life of seafoods and the
use of safe naturally-occurring compounds as
additives in combination with other techniques,

what is termed hurdle technology, has been


investigated. This work includes the use of
phenolic compounds in combination with
modified atmosphere packaging as melanosis
inhibitors and antioxidants. Aside from this,
prior research has included the study of the
molecular properties of fish heme proteins,
such as hemoglobin and myoglobin, their role
in the acceleration of lipid oxidation in fish
muscles and the development of techniques to
inhibit this process. Current areas of research
include the prevention of softening of prawns
during transportation and storage and the
development of active coatings or packaging
to prevent the growth of microorganisms and
to retard the lipid oxidation of fish and fish
products.
Summary of Achievements

Professor Dr. Soottawat Benjakul has
been actively involved in teaching and research
in the area of seafood science and technology
and the knowledge and technology gained from
his research has helped the seafood industry
to understand and solve problems revolving
around sustainability and competitiveness in
the world market. In his teaching, he has
transferred his knowledge and experience from
his research to his students and he has
supervised a large number of graduate students,
several of whom have become active faculty
members in other universities. Over the past
decade, Professor Soottawat has regularly
been invited to give lectures and presentations
and to manage training programs for both
public and private sector organization and, at
the same time, he has actively collaborated on
projects with the seafood industry.


Professor Dr. Soottawat Benjakul has
received research grants from the National
Research Council of Thailand, the National Center
for Genetic Engineering and Biotechnology, The
Thailand Research Fund, Prince of Songkla
University, the Swedish International Foundation
for Science, and Japan Society for the
Promotion of Science. He has published more
than three hundred articles in peer-reviewed
journals. He has also presented his research
work at national and international conferences
and has served as an ad-hoc reviewer for many
peer-reviewed international journals. Additionally,
in 2001, he was appointed to the editorial board
of the Journal of Food Biochemistry and he
has served as associate editor for several

national and international journals. Outside his


publishing engagements, he has been invited
to referee research proposals at both domestic
and international levels and for all of these
achievements he has been the recipient of
prestigious awards from many organizations and
agencies. These have included being nominated
Outstanding Researcher in Agriculture and Biology
of Thailand, awarded by the National Research
Council of Thailand in 2008 and the Science
and Technology Award, awarded by the Toray
Thailand Science Foundation in 2009. With this
outstanding record, Professor Soottawat has been
selected as the recipient of the Outstanding
Scientist Award for this year.

Dr. Kajornsak Faungnawakij was born


on July 3, 1978 in Pakpanang, Nakhon Si
Thammarat. He is the third son of Mr. Somsak
and Mrs. Warunee Faungnawakij, and is married
to Mrs. Saranya Faungnawakij. He finished
his schooling at Benjamarachutit School and
was awarded a first class honors degree in
Chemical Engineering from Prince of Songkla
University. He also received the gold medal
for outstanding students from the Engineering
Institute of Thailand. After graduation, he
pursued a Ph.D. in Chemical Engineering at
Chulalongkorn University under the supervision
of Prof. Wiwut Tanthapanichakoon, and two
professors from the University of Hyogo, Japan,
Professor Tatsuo Kanki and Professor Noriaki
Sano, who served as co-advisors. His Ph.D.
research, sponsored by the Royal Golden Jubilee
Ph.D. program, was in the area of design and
application of plasma reactors for the treatment
of polluted water and air and upon completing
his Ph.D., he was recommended by Assoc.
Prof. Anchaleeporn Waritswat Lothongkum to
work as a full-time researcher at the Japan
Science and Technology Agency in Kyoto. Dr.
Kajornsak completed his postdoctoral research
at Kyoto University with Prof. Koichi Eguchi
and Prof. Ryuji Kikuchi on the subject of
catalyst development for hydrogen production
and applications in solid-oxide fuel cells.

In 2008, he returned to Thailand and


started work as a full-time researcher at the
National Nanotechnology Center (NANOTEC),
a member of the National Science and
Technology Development Agency (NSTDA).
His first assignment included working with
Dr. Noppawan Tanpipat, Dr. Sirasak Teparkum,
and Prof. Wiwut Tanthapanichakoon to develop
the Bi-component Spinning Fiber Pilot Plant
development plan for the textile industry. Later,
in 2009, Dr. Kajornsak started the Nanomaterials
for Energy and Catalysis Laboratory at
NANOTEC. The research team includes Dr. Nawin
Viriya-empikul, Dr. Pratarn Wongsarivej, and
is supported by Prof. Sirirurg Songsivilai,
Executive Director of NANOTEC. The team
aims to use research and development in
chemical engineering and applied chemistry to
upgrade catalyst research by focusing on
multifunctional nanocatalysts. The catalysts
studied include spinel oxides, mixed alkaline
earth oxides, alumina, zeolites, and their
composites. The metallic, acidic, and basic
active sites along with the particle and pore
structures have to be precisely and selectively
controlled in order to obtain products with
suitable properties. His group designs active
catalysts for various types of reactors with the
aim of gaining the highest energy efficiency

and thus maximize productivity. In addition,


the team studies thermodynamics, kinetics,
molecular modeling, and system optimization.
The goal is, in the production of biodiesel,
synthetic diesel, alcohol, hydrogen, basic
chemical platforms, and related applications,
to replace homogeneous catalysts, which are
generally non-reusable and polluting, with
green and novel heterogeneous nanocatalysts,
which provide near zero pollution.
Dr. Kajornsak received research funding
from NANOTEC, NSTDA, and TRF for projects
investigating the use of catalysts for energy
production. He has participated as a research
colleague in various NSTDA research teams,
working with Dr. Boonyawan Yoosuk, Dr.
Supawadee Namuangruk, Dr. Pongtanawat
Khemthong, Dr. Nuwong Chollacoop, and Dr.
Verawat Champreda, and with researchers
from various universities including Dr. Apinan
Soottitantawat, Prof. Suttichai Assabumrungrat,
Assoc. Prof. Prasert Pavasant, and Assoc. Prof.
Tawatchai Charinpanitkul from Chulalongkorn
University, Assoc. Prof. Navadol Laosiripojana
from King Mongkuts University of Technology
Thonburi, and Dr. Okorn Mekasuwandumrong
from Silpakorn University, thus helping
to establish extended research networks.
Furthermore, Dr. Kajornsak and his team are
delighted to collaborate with agencies from

Dr. Kajornsak is now a senior researcher


and a group leader of Nanomaterials for Energy
and Catalysis Laboratory at NANOTEC. He
has published thirty-five articles in recognized
international journals, including Angewandte
Chemie International Edition, Journal of
Catalysis, Journal of Physical Chemistry C,
Applied Catalysis A, Applied Catalysis B, and
Environmental Science and Technology. He was
first or corresponding author in twenty-four of
these thirty-five articles and he has thirteen
patents and petty patents in national and
international patent agencies. Dr. Kajornsak has
been invited to give talks as keynote speaker at
several national and international conferences,
and to be a reviewer for several international
journals, including Chemical Reviews, Energy
and Fuels, Applied Catalysis B: Environmental,
Bioresource Technology, Fuel, and the Journal
of Hazardous Materials. For his dedication to
nanocatalyst research, Dr. Kajornsak was in
2010 awarded the CST Distinguished Young
Chemist Award in Inorganic Chemistry from
the Chemical Society of Thailand under the
patronage of Prof. Dr. Her Royal Highness
Princess Chulabhorn Mahidol.

Associate Professor Dr. Yongyut
Laosiritaworn was born on October 6, 1979 in
Bangkok, the son of Mr. Prapass and Mrs. Porntip
Laosiritaworn. Dr. Yongyut attended Guanghua
primary school, and Rayongwittayakhom secondary
school, both in Rayong. During his time at high
school, he received Physics Olympiad training
from Prof. Dr. Suthat Yoksan and the experience
inspired him to read Physics at Chulalongkorn
University, where he was financially supported
by the Development and Promotion of Science
and Technology talents project (DPST). During
his senior high school and undergraduate
study, Dr. Yongyut participated in a number of
important academic activities. This included
being selected by the Institute for the Promotion
of Teaching Science and Technology to be the
national representative at the 1994 International
Science School for High School Student,
organized by the Japanese Government. He also
developed speech analysis software, supervised
by Asst. Prof. Dr. Natthakorn Thubthong, which
won first prize in the 1996 Small Computer
Programming Competition organized by the
National Electronics and Computer Technology
Center and was selected in the Junior Science
Talent Project (JSTP), the National Science
and Technology Development Agency (NSTDA).
After completing his B.Sc. in 1998, he went
on, with DPST support, to study for his Ph.D. at
the University of Warwick in the United
Kingdom. His research was titled Modeling
the Magnetic Properties of Thin Metallic Films
using Monte-Carlo Simulation and was under
the supervision of Prof. Julie Staunton. After
his graduation in 2003, he returned to work

at the Department of Physics and Materials


Science at Chiang Mai University. At present,
he holds the position of Assoc. Prof. in Physics
and is Deputy Director of the Science and
Technology Research Institute at Chiang Mai
University.

In his research, Dr. Yongyut uses
computational physics techniques, especially
Monte Carlo simulations, a stochastic technique,
to study and predict the physical properties of
materials (particularly ferromagnetic and ferroelectric
materials) via the use of spin Hamiltonian. In
a Monte Carlo simulation, a problem is investigated
via probabilities associated with various states
of the system. Random numbers are then
used to generate important states and events
which occur frequently and which could be the
equilibrium or steady state. Consequently, the
important states in accordance with the problem
characteristic such as microscopic structure of
the system, material types, external perturbation

(e.g., temperature, pressure, electric field and


magnetic field) are achieved. It is therefore
possible to predict the systems energy and
its physical properties, e.g., magnetization,
electrical polarization, magnetic and electrical
susceptibilities, critical temperature or critical
exponent, or hysteresis properties (which vary
with the problems) to establish important
fundamental scientific database for the electronic
industries in designing various applications, e.g.,
hard-disk-drive, RAM, capacitors, or transformation
with better performance but more economical.
These research projects were supported, or
continue to be supported, by The Thailand
Research Fund and the Office of the Higher
Education Commission, NSTDA and the Center
of Excellence in Physics (via the Monte Carlo
and Molecular Dynamics in Physics Laboratory).
These projects have also helped Dr. Yongyut
develop a strong academic network with
researchers from both inside and outside
his university and the country. This network

includes Assoc. Prof. Dr. Supon Ananta,


Assoc. Prof. Wimalin Laosiritaworn, Asst. Prof.
Dr. Rattikorn Yimnirun, Prof. Dr. Julian Poulter,
Prof. Dr. Amar Bhalla and Prof. Dr. Ruyan Guo.

Dr. Yongyuts research has added
importantly to our knowledge of the physics of
materials and, at the same time, his teaching
has produced highly qualified graduates. This
is evident in the awards received from both
national and international organizations, which
have included, for instance, the Young Scientist
Award presented at the RCBJSF-10 conference
for his excellent oral presentation on the
topic Frequency Dependence of the
Ferroelectric-Hysteresis Phase-Diagram: Monte
Carlo Investigation at the Tokyo Institute of
Technology, Yokohama, the 2007 TRF outstanding
research award (as a researcher in the Smart
Materials for Advanced Electronics Research
Project). To date, Dr. Yongyut has published
more than fifty international (ISI) publications.

Dr. Yuttanant Boonyongmaneerat was
born on June 16, 1980 in Bangkok. He is the
first child of Mr. Yongyudh and Mrs. Sunantha
Boonyongmaneerat. Dr. Yuttanant completed his
primary and secondary schooling at Chulalongkorn
University Demonstration School. Subsequently,
he received a scholarship from the Ministry
of Science and Technology to study at
undergraduate and graduate levels in the US.
In 2002, Dr. Yuttanant graduated magna cum
laude with a bachelors degree in Materials
Science and Engineering from Brown University.
Whilst there, he worked as a research assistant
in Prof.. Clyde Briants Corrosion Research
Group, winning the Outstanding Materials
Engineering senior award, and was inducted to
the Sigma Xi and Tau Beta Pi honor societies.
Dr. Yuttanant pursued a Ph.D. in Materials
Science and Engineering at Massachusetts
Institute of Technology, and was granted
a Ronald A. Kurtz Graduate Fellowship to
support his study. His dissertation, under the
supervision of Assoc. Prof. Christopher A. Schuh
and Prof. Thomas W. Eagar, was concerned
with the forming and joining of powder-based
metal and ceramic. After completion of this in
2006, Dr. Yuttanant received a postdoctoral
fellowship from Northwestern University, where
he embarked on research into metallic foams
and coatings in collaboration with Prof. David
C. Dunand. In 2007, Dr. Yuttanant started his
career as a researcher at the Metallurgy and
Materials Science Research Institute (MMRI)
at Chulalongkorn University and in 2009, he
became a lecturer at the Institute. In the
same year, Dr. Yuttanant received the Thailand
Outstanding Young Metallurgist Award from
the 3rd Thailand Metallurgy Conference.

At this early stage of his research career,


Dr. Yuttanant was supported by the Young
Researcher grant, which helped him in
establishing his course of research. In 2008
and 2010, he received research grants from
The Thailand Research Fund/Office of the
Higher Education Commission and these grants
allowed him to conduct research related to the
development of electrodeposited nanocrystalline
nickel alloy and zinc alloy composite coatings,
which exhibit high hardness and corrosion
resistance. He was also granted research funds
by the Iron and Steel Institute of Thailand to
conduct research concerned with development
of a novel hot-dip galvanizing technique. Dr.
Yuttanant led the project under the guidance
and support of Assoc. Prof. Satian Niltawach.
In addition to a new galvanizing technique
that requires relatively low zinc consumption
and yields galvanized steels of high corrosion
resistance, a notable outcome of the project
also included thriving discussion, interaction
and collaboration between researchers from
academia and experienced personnel from
industry. Dr. Yuttanant has also received
research grants from various governmental and
private institutions, including the National Metal


Dr. Yuttanant believes in teamwork.
He launched and leads Poretege Research
Group (www.poretege.com) which consists
of researchers, technicians, graduate and
undergraduate students. The group collaborates
on research studies in the area of metallic
coatings. This knowledge is used to gain a
fundamental understanding of the subject and
the research program has been developed for
the benefit of the steel and alloys industry.
The research staff includes Dr. Supin Sangsuk,
Ms. Kanokwan Saengkiettiyut, Ms. Pranee
Rattanawaleedirojn, Dr. Nutthita Chuankrerkkul,
Ms. Sawalee Saenapitak, Mr. Jumpot
Wanichsampan, and Mr. Adisak Thueploy.
Currently, the team, under the name Metallic
Coatings Technology for Corrosion Protection
Research Group, receives a support grant from
the Special Task Force for Activating Research
program at Chulalongkorn University. It is
hoped that the group will become a center of
excellence in the future.

Dr. Yuttanant is also keen to collaborate
with researchers from other institutes to promote
multidisciplinary research and to establish a
metallic coating technology research network.
He collaborates with Assoc. Prof. Gobboon
Lothongkum, Asst. Prof. Ekasit Nisaratanaporn,
Asst. Prof. Dr. Sawai Danchaivijit, Asst. Prof.
Dr. Patama Visuttipitukul, Asst. Prof. Dr. Tachai
Luangvaranunt, Asst. Prof. Dr. Seksak
Asavavisithchai, and Dr. Panyawat Wangyao
from the Department ofMetallurgical Engineering
at Chulalongkorn University in studies of

materials processing and structural and property


analyses of metallic coatings of various types.
Through collaboration with Asst. Prof. Joongjai
Panpranot from the Department of Chemical
Engineering, the catalytic application of metallic
coatings is being extended. Dr. Yuttanant also
has worked with Dr. Kuljira Sujirot of MTEC
in a study of powder consolidation. Comprehensive
studies of fracture mechanics, sustainability,
and cost modeling of galvanized steels have
also been conducted through partnerships with
Dr. Petch Jearanaisilawong of King Mongkuts
University of Technology North Bangkok,
Dr. Sittha Sukkasi of MTEC, and Dr. Sappinandana
Akamphon of Thammasat University. Furthermore,
he works with Dr. RatchateeTechapiesancharoenkij
and Dr. Pongsakorn Jantaratana of Kasetsart
University and Dr. Papot Jaroenapibal of Khon
Kaen University on developments and analysis
of coatings for functional and magnetic

applications, and collaborates with X-Zell


Biotec Co., Ltd. in developing metallic coatings
for biomedical applications.

To date, Dr. Yuttanant has published
more than twenty international papers and has
filed three US and two Thai patents. He has
been invited to talk at numerous conferences,
both academic and industrial and he has also
been invited to act as a reviewer for many
international journals, including Surface and
Coatings Technology, Journal of Alloys and
Compounds and Scripta Materialia. When not
engaged in his academic work, Dr. Yuttanant
enjoys song writing and plays several musical
instruments. He was a finalist in the First
Thailand Ukulele Contest, sponsored by Ribbee
