Its all the rage in restaurants now to make salads with watermelon and feta.I have to admit that it leaves me cold—I dont nd that watermelon or fetaeach make the other taste better. However, when I started playing around withwatermelon, arugula, and freshly squeezed lemon juice, I found that the peppery greens and the acidic lemon make the sweet watermelon taste more interesting.This is a refreshing summer salad.
½ pound baby arugula leaves2 pounds seedless watermelon, ¾-inch-diced(3 pounds with the rind)¹⁄ ³cup good olive oil¼ cup freshly squeezed lemon juice (2 lemons)1 teaspoon kosher salt½ teaspoon freshly ground black pepper½-pound chunk Parmesan cheese
Place the arugula and watermelon in a large bowl. In a small bowl,whisk together the olive oil, lemon juice, salt, and pepper. Pourenough dressing on the arugula to moisten. Toss well and place on6 salad plates.With a very sharp knife or a vegetable peeler, shave the Parmesaninto large shards and sprinkle them on the arugula and watermelon.Sprinkle with salt and serve.
