watermelon & arugula salad
It’s all the rage in restaurants now to make salads with watermelon and feta.I have to admit that it leaves me cold—I don’t nd that watermelon or fetaeach make the other taste better. However, when I started playing around withwatermelon, arugula, and freshly squeezed lemon juice, I found that the peppery greens and the acidic lemon make the sweet watermelon taste more interesting.This is a refreshing summer salad.
½ pound baby arugula leaves2 pounds seedless watermelon, ¾-inch-diced(3 pounds with the rind)¹⁄ ³cup good olive oil¼ cup freshly squeezed lemon juice (2 lemons)1 teaspoon kosher salt½ teaspoon freshly ground black pepper½-pound chunk Parmesan cheese
Place the arugula and watermelon in a large bowl. In a small bowl,whisk together the olive oil, lemon juice, salt, and pepper. Pourenough dressing on the arugula to moisten. Toss well and place on6 salad plates.With a very sharp knife or a vegetable peeler, shave the Parmesaninto large shards and sprinkle them on the arugula and watermelon.Sprinkle with salt and serve.
