Marilyn Di Palma from Sedona, AZ 1 to 1 1/2 cups chocolate chips - this is great if you put the chocolate chips in a bowl and shake 1/2 teaspoon extra cinnamon to coat them. This is very popular. 1 to 1 1/2 cup chocolate chips and orange zest to taste. Lemon Variations Charlotte, NC Use lemon pudding and add 1/4 cup of poppy seeds. I bake these in a very small muffin pan for about 20 - 25 minutes. Jean M. French For lemon bread, I substitute lemon pudding mix and lemon extract, omit the cinnamon and nuts, and add poppy seeds. Cranberry Variations Janesville CA I've found that a cup of dried cranberries and a tsp of orange zest, along with a cup of chopped nuts, makes a nice holiday variation to the cake! Chocolate Brownies In a bowl, combine and mix well: 1 cup oil 1/2 cup milk 3 eggs 1 tsp vanilla 1 cup Amish Batter * In a separate bowl combine the following dry ingredients and mix well: 2 cups flour 1- 1/2 cups sugar 1-1/2 tsp baking powder 1/2 tsp baking soda 1 - (5.1 oz) box instant chocolate pudding 3 heaping TBS of cocoa 1/2 tsp salt 1 cup pecans or walnuts Add dry ingredients to wet ingredients. Mix and pour into two well greased and sugared bread pans. Bake at 325 degrees for 1 hour.

Apple Bread 1-1/2 cup sugar 2 tsp cinnamon 2 eggs 1 cup Amish batter * 1/2 tsp baking soda 1 tsp salt Fold in by hand : 1 cup chopped nuts 3 cups diced fresh apples Pour into 2 well greased loaf pans. Bake at 375 degrees F 50-60 minutes.

Chocolate Cake Cream: 2/3 cup shortening 1- 2/3 cup sugar Add: 3 eggs 1 cup Amish batter * 1 tsp vanilla Beat 2 minutes on medium speed. Combine: 2/3 cup cocoa 1-1/2 tsp baking soda 1 tsp salt 2 cups flour 1/2 tsp baking powder Add flour mixture to batter alternately with 3/4 cup cold water. Beat 1 minute on medium speed. Mix in by hand 1cup chopped nuts. Pour into greased and floured 9x12 pan. Bake at 375 degrees F for 30-40 minutes.

Designer Coffee Amish Friendship Bread "the recipe below is a welcome addition to any coffee group! It's a coffee/chocolate taste sensation!" "This recipe receives rave reviews wherever it's brought, and the accompanying cream cheese can be used for other breads as well. Omit vanilla pudding; add 2/3 cup GF International Coffee (I like SuisseMocha) and chocolate chips. For cream cheese spread, beat 8 oz cream cheese with a packet of serving size Cappucino mix and 1/3 cup sugar. Yum!"

Amish Cornbread 1 cup Amish batter * 2 eggs 1-1/2 c. milk 2 tsp sugar 1/2 cup flour 1-1/2 c. cornmeal Combine in large bowl. Beat at medium speed for 2 minutes. Add: 1/4 cup oil 3/4 tsp baking soda 1/2 tsp salt 1 tsp baking powder Mix well. Pour in well-greased 9" pan. Bake at 425 degreesF 25-30 minutes.

Chocolate Chip Applesauce Cookies Combine in small bowl and set aside. 1-1/2 cup applesauce 3 tsp baking soda Cream together: 3/4 cup brown sugar 3/4 cup sugar 1 tsp vanilla 1 cup shortening Add: 1 cup Amish batter * 1 egg Beat 2 minutes on medium speed. Add applesauce mix alternately with 4 1/2 C. flour and 1 tsp baking powder. Mix until well blended. Fold in 2 cups (12 oz.) of chocolate chips. Drop batter on cookie sheet. Bake at 350 degrees F for 8-10 minutes.

Amish Friendship Muffins 1 cup Amish batter * 2 cups flour 3/4 cup oil 1 tsp baking soda 2 tsp baking powder 1 cup sugar 3 eggs 1-1/2 tsp cinnamon 2 tsp vanilla Stir Well. Add: 1 cup nuts, chopped OPTIONAL 1 cup apples, chopped 1 cup raisins, or 1 cup blueberries Mix Well. Put into muffin tins well greased if not using liners. Sprinkle with topping on each muffin and bake at 350 degrees F for 15-20 minutes or until done. TOPPING 1 cup brown sugar 1/2 cup flour 1/4 cup margarine Mix well and sprinkle over tops of muffins before baking.

Pancakes II My favorite of the bunch: Amish Friendship Pancakes! Prep Time: 10 minutes Cook Time: 15 minutes Servings: 24 Yield: 24 pancakes Ingredients 1 cup flour 1/2 teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 2 tablespoons oil 2 cups Amish Friendship Bread Starter 1/2 cup milk (plus 1/4 cup if needed) 1 egg Directions 1. 2. 3. 4. 5. Set a nonstick skillet over medium heat. Combine flour, salt, baking powder and baking soda in a large mixing bowl. In a smaller bowl, combine oil, Amish Friendship Bread starter, milk, and egg. Add ingredients of smaller bowl to the ingredients of larger bowl and mix on medium speed. Spoon batter onto skillet or a greased griddle. Cook until bubbles appear on the surface, then flip and cook until browned on the other side. Kitchen Notes Add 1 cup fresh or thawed blueberries, strawberries, or bananas. Add before flipping pancakes over. From Susan Buetow: Add in 1 cup of mini chocolate chips to the batter for an extra special treat. Another add in is 1 teaspoon of vanilla and 1/2 teaspoon of cinnamon. These are a family favorite. From K Brown: Add cinnamon chips before flipping the pancakes. These turn out light and fluffy.

Amish Pancakes & Waffles Pancakes Combine in large bowl: 1 cup flour 1/2 tsp salt Combine in smaller bowl: 2 TBS oil 2 cups Amish batter * 1/2 cup milk (plus/minus 1/4 cup) 1 egg Combine in smaller bowl: 2 TBS oil 2 cups Amish batter * 1/2 cup milk (plus/minus 1/4 cup) 1 egg

1 tsp baking powder 1 tsp baking soda Add ingredients of smaller bowl to ingredients of large bowl and mix on medium speed. Spoon batter onto greased griddle. Waffles Prepare batter for pancakes except increase oil to 1/4 cup.

Amish Cinnamon Rolls 2 cups flour 1 cup milk 1 cup Amish batter * Combine and let set at room temperature overnight or 10-12 hours. Stir down. Combine: 3 t. sugar 1 egg 1/2 cup shortening 1 tsp. salt 1/2 tsp baking soda 1 tsp baking powder Add into small bowl all at once to stir down. Pour dough out on well-floured board. Knead until no longer sticky. Roll out to 1/2" thickness in a rectangle shape. Brush dough with soft butter. Combine: 1/4 cup sugar 1 TBS cinnamon 1/2 cup crushed nuts Sprinkle cinnamon-sugar mixture over dough. Beginning at wide side, roll up, and seal seam. Cut 1" slices. Place on well-greased cookie sheet. Let rise 30 minutes. Bake at 350 degrees F 30-35 minutes.

Cinnamon Streusel Emily Dean writes that the following recipe is her friend's, Sherry Pressley. "This is a wonderful recipe. You've got to try it. It is Yummy. Before I start the Amish bread (day 10 - Armchair World), I get my pans ready and make the streusel: 1 stick butter or margarine at room temp. 2/3 C packed brown sugar 2/3 C flour cinnamon - as much as you like Put the ingredients together. (1 C chopped pecans are optional.) This will make approx. 2 cups. If you like a little more, increase the sugar and flour to 1C each. Make your Amish bread according to directions. Put approx. 1-1/2 C batter in the bottom of each pan and spread into the corners. (Batter will not be runny - sort of a heavy batter.) Top with 1/2 C streusel, remaining batter and remaining streusel.

To the basic recipe add one box of fudge pudding mix and an additional 1/2 cup milk. Omit the cinnamon. Lemon Amish Friendship Bread Substitute Lemon Extract for the vanilla flavoring. To the basic recipe add 1 box of lemon pudding and an additional 1/2 cup milk. Omit the cinnamon and nuts, and add 1/4 cup of poppy seeds.For extra flavor, add 2 cups shredded coconut.

Cranberry-Orange Amish Friendship Bread When making the basic recipe, substitute orange juice for milk. Before baking, stir in 1 tablespoon grated orange zest (colored portion of peel) and 1 cup dried cranberries. Banana-Chocolate Chip Amish Friendship Bread When making the basic recipe, reduce oil to 1/3 cup. Reduce cinnamon to 1 teaspoon. Add 1 (5.1 oz) box of instant banana pudding mix and an additional 1/2 cup milk. Before baking, stir in 1 cup very ripe mashed bananas and 1/2 cup semisweet chocolate minichips. Before baking, stir in 1 cup canned pumpkin. Strawberry Amish Friendship Bread To the basic recipe add 1 small box of strawberry jello and an additional 1/2 cup milk.Add 1 cup thawed strawberries.

Add to the basic recipe the following ingredients: 3 medium carrots shredded 1/2 cup raisins 1/2 cup chunky homestyle applesauce 1 teaspoon nutmeg 1/2 teaspoon clove 1/2 cup chopped walnuts Use a a bundt pan instead of a loaf pan. Bake until a wooden toothpick inserted in the center comes out clean. Can be frosted with cream cheese frosting. just as wonderful as the orginal. Prep Time: 15 minutes Cook Time: 12-15 minutes Servings: 8-12 Yield: 8-12 scones Ingredients 1 cup Amish Friendship Bread Starter 2 cups flour 2 teaspoons baking powder 3 tablespoons International Cafe Mocha Mix 1/4 teaspoon salt 1/2 teaspoon baking soda 1/2 cup chilled butter 1 egg, beaten 1/2 cup natural applesauce 1/2 cup mini chocolate chips Vanilla Glaze Directions 1. Preheat oven to 400 F (200 C). 2. In a mixing bowl combine flour, baking powder, mocha mix, baking soda and salt. 3. With a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in center of dry mixture; set aside. 4. In another bowl combine starter, applesauce and egg. Add egg mixture all at once to dry mixture. Using a fork, stir just until moistened. Knead in chocolate chips. 5. Turn out dough onto lightly floured surface. Shape into 4 x 12 rectangle. Cut rectangle into quarters (4 x 3) and cut each piece on the diagonal to form 8 wedges. 6. Place wedges 1 inch apart on ungreased baking sheet. Top with mocha mix if desired. 7. Bake for 12 to 15 minutes until golden. 8. Once cooled, top with glaze. 9. ENJOY! Amish Friendship Bread Monkey Bread Serve this gooey cinnamon bread at your next Sunday Brunch. Prep Time: 20 minutes Cook Time: 30 to 35 minutes Servings: 12 Yield: 1 Bundt pan Ingredients Dough: 1 cup Amish Friendship Bread Starter 2 cups self-rising flour 1 cup milk 3 tablespoons sugar 1 egg 1/2 cup shortening 1 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon baking powder 3/4 cup crushed nuts (optional) 2 cups of extra flour to knead Gooey Cinnamon Mixture: 2 cups brown sugar 1 cup butter 2 tablespoon cinnamon Directions 1. 2. 3. 4. 5. 6. 7. 8. 9. 10. 11. 12. 13. 14. 15. 16. 17. In a large mixing bowl, combine starter, flour and milk. Set aside at room temp. overnight. The next day, preheat oven to 350 F (175 C). Stir the bowl mixture and mix in remaining dough ingredients. Pour dough out onto a well floured surface. Knead and add flour until dough is no longer sticky. Shape dough into a large ball and let rest while making gooey cinnamon mixture. Add all gooey cinnamon mixture ingredients into a sauce pan and cook until sugar has dissolved. Spray Bundt pan with cooking spray. Pour a small layer of gooey mixture in bottom of Bunt pan. Pull apart about 40 dough balls, rolling each sticky ball in a small amount of flour. Add the dough balls to the Bundt ban. Equally pour remaining gooey cinnamon mixture over the top of dough balls. Bake for 30 to 35 minutes. Let rest for 5 minutes. Take a plate and place upside down over Bundt pan. Flip right side up onto plate. ENJOY! Kitchen Notes From Laila Gower: For another variation of this bread use equal amounts of white flour and wheat flour. Instead of nuts, add raisins.

Preheat oven to 350 F (175 C). Butter the bottom and sides of a 9 x 13 baking dish. In a bowl, mix peaches with 3/4 cup sugar, 3 tablespoons of flour and 1 teaspoon of cinnamon. Pour peach mixture into baking dish. In another bowl, mix together starter, flour, 3/4 cup of sugar, vanilla and baking powder. Pour starter mixture over peaches. Prep Time: 3 hours Cook Time: 25 to 30 minutes Servings: 16 Yield: 2 loaves Ingredients 1 cup Amish Friendship Bread Starter 1 1/2 cup lukewarm water 2 teaspoons yeast 1 tablespoon kosher salt 5 cups flour cornmeal spray bottle of water extra flour for work surface and top of bread oil for bowl Directions 1. 2. 3. 4. 5. 6. 7. 8. 9. 10. 11. 12. 13. 14. 15. 16. 17. 18. 19. In a stand mixer bowl with dough hook, add starter. Pour water on top and sprinkle on the yeast. Let sit for 5 minutes. Add salt and flour, gradually. In the stand mixer, blend on low for 5 minutes until dough pulls away from the sides and forms into a nice ball. Oil a glass bowl, one large enough to handle a double rising of the dough. Place dough in bowl, cover with plastic wrap to let double for approximately 1 1/2 hours. Sprinkle flour on work surface and add risen dough. Sprinkle a 16 x 12 pan with cornmeal. Cut dough in half. Place dough side-by-side on pan, but not touching. Cover and let rise for 1 hour. Preheat oven 425 F (218 C). After 1 hour, lightly sprinkle dough with flour. Cut a tic-tac-toe pattern on top of dough with a very sharp serrated knife. Place pan in middle of oven. Quickly spray water inside the top of the oven. Some water will get on the dough. While baking, spray water again after baking 10 minutes and again at 20 minutes. Bake for 25 to 30 minutes. Dough will be brown on top and dark brown on the bottom. Thump the top of the bread to hear an echo, hollow sound. Let cool. ENJOY!

Set a nonstick skillet over medium heat. Combine flour, salt, baking powder and baking soda in a large mixing bowl. In a smaller bowl, combine oil, Amish Friendship Bread starter, milk, and egg. Add ingredients of smaller bowl to the ingredients of larger bowl and mix on medium speed. Spoon batter onto skillet or a greased griddle.
