1 kilo khoya;

250 grams sugar;

50 grams blanched and sliced pistachio nuts;

100 grams peeled melon seeds;

1 tsp.coarsely powdered cardamom seeds;

a few drops essence of kewda; silver or golden foil.


Mix together khoya and sugar and keep it in a heavy-bottomed pan.

Stir over a slow fìre till all the moisture is absorbed and the mixture turns very thick.

Mix in the nuts, cardamoms and essence and remove from fire. Put in a greased thali.

Cool thoroughly, cover with foil and cut into small pieces.

Store in airtight container.



1 litre milk;

25 grams makhana;

75 grams sugar;

10 grams each of sliced almonds, pistachios and raisins;

15 grams charoli;

a Few drops of either essence of saffron or kewda.


Roast makhana in dry hot pan for 2 minutes, remove and pound coarsely.
