Serbia is placed in South East Europe. It is part of Western Balkan. This territory was a crossroad for Celtic settlers, ancient conquerors, Alexander the Macedonian, the Roman Empire, Byzantines, the Ottoman Empire, and the Austro-Hungarian Empire. All of them sowed their genes, customs, cultures, and food habits. Belgrade, the capital, is placed on the banks of two rivers, Sava and Danube, south east wind “Koshava”, mountain Avala nearby and great cuisine that is heritage of turbulent history.

Serbian cuisine is like the life Serbians live; life far away from fairytale, full of passion, insurgency, and truculence. When you taste this food you will feel love and care of all mothers and spouses, waiting for their sons, warriors, and knights. In every bite is thunder of horses. Every gulp of wine is enriched by tears and hot summer rain. Bread is marked by the calluses of a tired plowman. Once you try it, you will be trapped forever.

About the author

Martha is a chef and a cookbook author. She has had a love of all things culinary since she was old enough to help in the kitchen, and hasn’t wanted to leave the kitchen since. She learned many of her culinary abilities from her mother; most importantly, the need to cook with fresh, homegrown ingredients if at all possible, and how to create an amazing recipe that everyone wants. This gave her the perfect way to share her skill with the world; writing cookbooks to spread the message that fresh, healthy food really can, and does, taste delicious. Now that she is a mother, it is more important than ever to make sure that healthy food is available to the next generation. She hopes to become a household name in cookbooks for her delicious recipes, and healthy outlook.Martha is now living in California with her high school sweetheart, and now husband, John, as well as their infant daughter Isabel, and two dogs; Daisy and Sandy. She is a stay at home mom, who is very much looking forward to expanding their family in the next few years to give their daughter some siblings. She enjoys cooking with, and for, her family and friends, and is waiting impatiently for the day she can start cooking with her daughter.

Balkan Boats

This meal is nice to share with family and friends, when gathered around table. For each person, make one boat. So, it is easy to modify measures. There is only one thing that is really important: find eggplants that are about the same size. And remember, one eggplant is for two boats.

Ingredients for 6 servings:

3 eggplants (20oz)

10oz mixed minced meat

2oz onions

2 garlic cloves

1 teaspoon tomato puree

1 teaspoon sugar

2 tablespoons olive oil

1 tablespoon sunflower oil for casserole

4oz grated cheese

4oz fresh tomato

Salt, pepper, dry seasoning, pinch of basil, pinch of oregano, pinch of rosemary

Cut the eggplants lengthwise. Hollow out the eggplants’ meat so that you have small boats. Put the scooped-out insides in cold water for half an hour. After that period, chop in small cubes.

Heat olive oil in a frying pan. Add chopped onions and garlic. Fry until golden and soft. Add meat and stir well. Add cubes of eggplant, sugar, tomato puree, and spices. Make a nice, juicy filling.

Oil a ceramic casserole dish. Place boats in casserole. Fill them with prepared filling and cover each boat with fresh tomato rings. Put in the preheated oven (640F/1800C). Bake for 45 minutes. Sprinkle boats with grated cheese. Put back in the oven for 5 more minutes.

Serve with fresh tomato salad and enjoy.
