About the author

Martha is a chef and a cookbook author. She has had a love of all things culinary since she was old enough to help in the kitchen, and hasn’t wanted to leave the kitchen since. She was born and raised in Illinois, and grew up on a farm, where she acquired her love for fresh, delicious foods. Balkan Boats

This meal is nice to share with family and friends, when gathered around table. For each person, make one boat. So, it is easy to modify measures. There is only one thing that is really important: find eggplants that are about the same size. And remember, one eggplant is for two boats.

Ingredients for 6 servings:

3 eggplants (20oz)

10oz mixed minced meat

2oz onions

2 garlic cloves

1 teaspoon tomato puree

1 teaspoon sugar

2 tablespoons olive oil

1 tablespoon sunflower oil for casserole

4oz grated cheese

4oz fresh tomato

Salt, pepper, dry seasoning, pinch of basil, pinch of oregano, pinch of rosemary

Preparation:

Cut the eggplants lengthwise. Hollow out the eggplants’ meat so that you have small boats. Put the scooped-out insides in cold water for half an hour. After that period, chop in small cubes.

Heat olive oil in a frying pan. Add chopped onions and garlic. Fry until golden and soft. Add meat and stir well. Add cubes of eggplant, sugar, tomato puree, and spices. Make a nice, juicy filling.

Oil a ceramic casserole dish. Place boats in casserole. Fill them with prepared filling and cover each boat with fresh tomato rings. Put in the preheated oven (640F/1800C). Bake for 45 minutes. Sprinkle boats with grated cheese. Put back in the oven for 5 more minutes.

Serve with fresh tomato salad and enjoy.

Balkan Hodgepodge

Ingredients for 4 servings:

35oz pork neck meat with fat

35oz red grilled pepper

17oz onions

1.5oz garlic

17oz peeled tomato

1 teaspoon sugar

1 red hot cayenne pepper

3oz sunflower oil

1 cup beef soup
