INGREDIENTI:
Wasabi
200 g di riso per sushi cotto
40 g di salmone o tonno fresco
alga nori
zenzero
salsa di soia
PREPARAZIONE:
1- Prendete un foglio di alga nori e tagliatelo a metà; ponetelo sulla stuoia apposita per il sushi; se lo desiderate potete mettere sulla base uno strato di pellicola da cucina trasparente. La parte liscia dell’alga deve essere girata verso il basso.
2- In una ciotola versate acqua e aceto di riso, immergeteci le mani, e andate poi a prendere circa 100 g di riso per sushi cotto. Rendere le mani umide serve per fare in modo che il riso non si appiccichi essendo molto colloso.
3- Spalmate il riso lungo l’alga lasciando una striscia libera nella parte superiore del foglio. Lo strato di riso non deve essere troppo spesso.
4- Se lo desiderate potete stendere un pizzico di wasabi al centro del foglio. Se non vi piace il piccante omettete questo passaggio.
5- Tagliate un bastoncino di salmone o tonno crudo fresco del diametro di 1 cm; mettetelo sul foglio. Aggiungete o tagliate eventuali pezzi di pesce per coprire la lunghezza dell’alga nori.
6- È giunto ora il momento di chiudere il rotolo. Prendete la parte inferiore della stuoia, arrotolate spingendo verso l’interno il salmone o il tonno. Girate fino a formare un rotolo. Per tutto il processo di chiusura, mantenente una certa pressione con le mani, in modo tale da compattare al meglio il riso con l’alga e il pesce.
7- Sigillate con la striscia di foglio su cui non avete posto il riso. L’umidità di quest’ultimo farà da collante.
8- Una volta chiuso stringete il rotolo con le mani per assicurarvi che sia tutto bene stretto.
9- Toglietelo dalla stuoitetta; poggiatelo sul tagliere. Bagnate la lama di un coltello affilato con acqua mista a aceto di riso ( sempre per evitare che si appiccichi); tagliatelo a metà, mettete vicine le due parti e fate altri 3 tagli. Otterrete 6 pezzi si hosomaki.
Fate molta attenzione alla consumazione del pesce crudo. Prima di mangiarlo è necessario abbatterlo; congelatelo a -18 gradi in freezer per almeno 96 ore.
