I usuall y cut it lengthwise down the middle then widthwise every inch or so. Season with 1/4tsp or less of salt, then shake chili powder so the skin is covered with the black chile mixture. Take a pinch of cayenne pepper and LIGHTLY shake your fing ers over fish (too much and its muy caliente). Shake Mrs. Dash chicken seasoning over salmon using as much as you want. Cover fish in a good amount of garlic po wder, but don't go overboard, cause if you put a ton you get this weird bitter t aste in the back of your mouth.Carefully combine everything together with a big spoon (salmon is really delicate). Shake onion flakes on there like there's no t omorrow, and mix again with big spoon. Place salmon pieces on baking pan with fo il that has been sprayed with Pam. Spray top of salmon with copious amounts of P am (we love Pam). Bake on center rack for 5 minutes. Move pan to the top rack an d bake for another 5 minutes. Check salmon, and depending on how it's cooking yo u'll probably bake it for another another 5 minutes or less. Take it out and you've got a healthy version of fish sticks. Voila!!
