Farmer’s Wyfe Gumbo (Serves 6

(a mix of several recipes by me)

Ingredients: 3 Tbs. butter/coconut oil 3 Tbs. flour ¾ cup chopped green bell pepper ¾ cup chopped onion 3 minced garlic cloves 3 cups of broth (chicken or shrimp) 4 cups of canned tomatoes, undrained 1 ½ cups of okra 1 Bay Leaf, shake of cayenne pepper (1 tsp kelp optional) salt to taste a leaf of kale 2 cups cooked chicken 10 – 15 large shrimp (optional) 2 cups of cooked rice Directions: Make roux by cooking and stirring the butter and flour over mediumhigh heat. Cook til browned. Add chopped onions, peppers, and garlic. Cook until lightly browned. Add broth, canned tomatoes, spices; and kale. Cover and cook for 10 minutes. Take the lid off, and cook for 10 minutes more. Finally, add the chicken (and shrimp) and cook for five minutes. Serve over rice.
