Tradi&onal  German  Pancake  

Ingredients! ! ½ Cup Milk! ½ Cup Flour! Pinch of Salt! 4 Eggs! 1 Tablespoon Butter! 1 Tablespoon Vegetable Shortening! Powdered Sugar! Lemon Wedges! Berries to Garnish! !

Serves 2! ! This one is a staple of the Milwaukee’s North Shore—Courtesy of Jack Pandl’s Whitefish Bay Inn.! ! Preheat oven to 425º.! Mix the flour, milk and salt, and blend until smooth. Add eggs and blend until smooth. Melt butter and vegetable shortening over medium heat in a 9-10 inch, slope-sided pan with an oven proof handle. Add pancake mix and cook until the bottom is brown. Now you have to flip it. Make sure there is still loose batter in the pan when you flip. You may need to use two spatulas. (Note: After a failed first attempt, I went from one pan to another. Flipping these buggers isn’t easy). ! Cut an X across the pancake all the way through to the pan. Place pancake in oven and bake until done, about 6-10 minutes. It should rise 3-5 inches around the pan. ! Cut into two slices, garnish with powdered sugar, lemon, and berries, if desired. ! ! Once again, thank you Pandl’s ! Whitefish Bay Inn! ! !
