Ugandan Peanut Soup

Ingredients: 2 T olive oil 3 ginger roughly chopped 2 carrots - peeled chopped 1 clove minced garlic 1 onion (2 c.) - diced 1 sweet potato - peeled and chopped 6 c. veg/chick broth 14.5 oz crushed tomatoes 1 c. creamy peanut butter topping: roasted peanuts green onions Instructions: 1. saute ginger, carrots, garlic and onion in oil for 2 minutes 2. add potato & stock 3. Bring to boil and simmer 10 minutes 4. Add tomatoes and peanut butter, warm until PB melts 5. use immersion blender until smooth 6. top with roasted peanuts and green onions.
