Orange Bread Muffins with Frosting

Ingredients Bread: 180gr Whole wheat / Spelt flour 1tsp Baking soda Salt 100ml Honey / Agave nectar 80ml Olive oil 1 Egg 1tsp Vanilla 1 Orange, peeled 1tbsp Orange zest

Frosting: 1/2 tub Cream cheese 1tbsp Butter 200gr Icing sugar 1tsp Vanilla

Method: Sift the flour, baking soda & salt together in a large bowl. Blend the honey, oil, egg, vanilla, orange & zest together. Pour the liquid ingredients over the dry ingredients, mix well. Pour into prepared pan and bake at 170C for about 35/40 minutes or until a toothpick inserted in the centre comes out clean. While the cake bakes, mix the cream cheese, butter, vanilla and icing sugar thoroughly. Frost the muffins when cool.
