Badam Exotica

By Rama Shankar A rich dessert with dried fruits.

Serves: Four Time required: 40 minutes Plus soaking time

Ingredients 1 cup (135 g) almonds 3/4 cup (185 ml) milk 3/4 cup (150 g) sugar 1 tsp (2 g) saffron 3 tbsp (45 g) ghee 12 (15 g) pistachios, chopped fine 12 (20 g) cashewnuts, chopped fine

Method Soak the almonds in hot water for three hours. Peel and grind in a mixie with the milk, sugar and saffron. Heat the ghee in a frying pan, pour in the almond mixture, and stir continuously in one direction for 20 minutes, to allow the batter to thicken. Allow it to bubble and when it leaves the sides of the pan, remove from heat. Pour into a dish, and decorate with pistachios and cashewnuts.
