Aunt Gertie Beas Buttermilk Fried Chicken (4 servings; from Gators Neo Soul) 4 chicken breasts (bone-in) 2 cups

flour 3 tsp black pepper 3 tsp kosher salt 2 cups corn oil (or equivalent, but not olive oil) 2 cups buttermilk 1. In bowl, place chicken in buttermilk and let soak (refrigerated) for at least 5 hours (preferably 48 hours). 2. Preheat oven to 375 3. Mix together flour, salt and pepper. Drain chicken, and coat completely with flour mixture. 4. Heat oil to 425 in a deep pan and brown off chicken for a few minutes to get the look of fried chicken (use tongs to turn chicken). 5. Remove chicken from oil and place on rack in a baking dish. Cover dish with foil. 6. Bake for 30-40 minutes or until done.
