Ingredients:
100g S. R. flour 75g soft fat 75g caster sugar 1 egg little milk
Equipment:
large bowl scales wooden spoon knife teaspoon plastic scraper patty tin and 12 paper cases wire cooling tray
Optional:
25g chocolate chips 25g dried fruit
25g coconut 25g cocoa powder vanilla essence grated apple and cinnamon
METHOD
1. 2. 3. 4. 5. 6. 7. 8. 9. 10. 11. 12. Put the oven on. Collect equipment. Weigh out flour, fat and sugar. Beat together Crack egg and add to mixture and beat. Add any optional extras and beat. Add a little mix if needed to form a soft dropping consistency. Using a teaspoon carefully put one heaped spoonful into each paper case. Take the scalper and clean the bowl. Place cakes carefully in the oven. DO NOT OPEN THE DOOR WHILST COOKING Check with a skewer it should come out clean. Remove from oven and place on cooling tray.
