Banana Crumb Muffins 1 c. flour 1/2 c. whole wheat flour 1 t. baking powder 1 t. baking soda 1/2 t. salt 3 bananas mashed 3/4 c.

sugar 1 egg, slightly beaten 1/3 c. butter melted topping: 1/3 c. packed brown sugar 2 T. flour 1/8 t. cinnamon 1 T. butter 1. Preheat oven to 375. Line muffin tin with paper liners. 2. In large bowl, mix flour, baking soda, baking powder and salt. In another bowl beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups. 3. In small bowl, mix together brown sugar, flour and cinnamon. Cut in butter with pastry blender until mixture is crumbly. Sprinkle topping over muffins. 4. Bake in preheated oven 18 - 20 minutes. Makes 15 muffins. Do NOT overfill.
