Bagels 1 2 1 3 2 1/4 c warm water (I do just slightly less than this) tbsp sugar 1/2 tsp salt c flour 1/4 tsp yeast

Add water, sugar and salt to machine first. Then flour with the yeast added last in a well. Run the dough cycle. When it's done, I shape the dough in a rectangle on a floured board and cut it into 6 pieces with a pizza cutter. Shape them into a ball, poke your finger through the middle and stretch the hole out a little, then place them on a sheet pan sprayed with a little Pam. Cover with a towel and let sit for 10 minutes or so while you bring a pan of water to a boil. I use a 12 inch deep skillet with 3 tbsp sugar added to the water. Boil the bagels (I do 3 at a time) for 1 minute, flipping them after 30 seconds. I always splash water all over my kitchen when I do this. Let them sit on a cooling rack for a few minutes, then put them back on the sheet pan that you have wiped off and added a thin layer of corn meal to. Bake at 375 for 22-24 minutes. I check them after 22 and usually leave them for a couple more because I like them browned more, but they are done after 22. If you want to do cheese, add asiago or parmesan cheese shreds after boiling, but before baking (obviously). I also do blueberry, but I use blueberry flavored craisins because they are cheaper and no one has gotten wise to it. I add them right into the bread machine at the beginning with a little cinnamon. The recipe calls for 1 c water, but I found that the dough was too dry and I always ended up checking the machine after a few minutes and having to add more, so now I just add more from the start. I still have to scrape the sides of the machine pan down after 5 minutes one time, but I don't add any more water. These are awesome, but they are best eaten within a few days. I have only had one occasion when they lasted longer than that though, and it was because I made three batches at once. Normally they are gone the same day. After typing all that out, I realize it looks like a complicated process, but it really isn't at all. Let me know how they turn out.
