partially covered.Soups Granny’s Lentil Barley Soup 2 T olive oil 2 c chopped onions 2 c diced carrots 1 T minced garlic 1-2 t ground cumin 1 c dried lentils 4 c chicken broth 1 can (28 oz. and cook 45 minutes. heavy pot over medium high heat. Minestrone Soup 1 jar spaghetti sauce 1 1/2 jarswater 2 cubes beef boullion 2 onions 2 stalks celery 3-4 carrots 1 can diced tomatoes 1 can kidney beans 1 t garlic powder 1 t oregano 1 t basil 1 bay leaf 1/2 c frozen peas 1/2 lb cooked pasta 1. stirring occasionally. 3 . Add the lentils. 2. chopped. Add garlic and cook 2 minutes. Add cumin and cook 1 minute longer. Add the barley. for 8 minutes. and brown sugar. cover partially. stirring. and cook 5 minutes. Notes: • This recipe came from Granny Bazura.) plum tomatoes. Add onions and carrots. 2. Heat oil in large. tomatoes. 3. Bring mixture to a boil. cook all ingredients except pasta and peas for 20 minutes. with their juices 1 T brown sugar 1/2 c dried barley 1/2 c chopped parsley Salt and pepper to taste 1. In a large pot. chicken broth. cook. Add peas and pasta and simmer until warm. reduce heat slightly. stirring occasionally. Stir in the parsley and season to taste with salt and pepper.

Notes: • This recipe came from Ma Bauer. 2. Saute onion and green pepper in oil. 3. Spicy Bean Soup 1 T oil 1/2 c chopped green pepper 1/2 c chopped onion 1 can condensed tomato soup 1 soup can water 1. crushed 1/8 t pepper 1 meaty ham bone (about 1 1/2 pounds) 7 c water 1. Remove meat from bone. chop meat and return to soup. carrots. Reduce heat to low and cover for 5 minutes. Cover and simmer about 10 minutes. Ma’s Lentil-Ham Soup 1 lb dry lentils (about 2 1/3 cups) 1 1/2 c chopped carrot 1 c chopped onion 1 c chopped celery 1/4 c snipped parsley 1/4 t dried marjoram. Add remaining ingredients and bring to a boil. potatoes. Cover and cook on low heat setting for 9 to 11 hours. 3. then reduce heat. 2. Bring to a boil. Add chesse and stir until melted. 4. Lift ham bone from soup. onions and celery.Cheesy Potato Soup 2 c chicken broth 1 c peeled and diced potatoes 1/2 c finely shredded carrots 1/4 c chopped onions 1/4 c finely chopped celery 2 c milk 2 T cornstarch 1 c cheddar cheese 1. 2. 3. combine broth. or until the vegetables are tender. In a medium saucepan.

Summer Corn Chowder 4 2 2 3 oz bacon onions stalks celery. corn.Mom’s Green Split Pea Soup 1 c green split peas 2 carrots. diced cans chicken broth 4 ears corn. Brown and drain meat. chopped stalks celery. 4. 3. sliced 14 1/2 oz can diced tomatoes 1/2 t pepper 1 10 oz package frozen mixed vegetables 2 t beef base granules 1/2 c butter 1/2 c flour 1. Simmer until soup is hot. Cook over medium-low heat until translucent. Cook 1/4 inch pieces of bacon in a large. diced 1-2 large onions. 3. 5. heavy pot over medium-high heat. Add onions and celery. Melt butter over medium heat and stir in flour until smooth. Steak Soup 1 3 1 3 2 1 lb ground beef c water onion. 2. Reduce heat and simmer until potatoes are tender. diced 2 c half and half 1. about 8 minutes. about 1 1/2 hours. Add mixture to soup and stir until thickened. diced 2 stalks celery. 4. Put all ingredients except butter and flour into crock pot and cook for 8 hours on low or 4 hours on high. Add chicken broth.

7 . Notes: • This came from my 8th grade home economics class cookbook. 4. Pour mixture into muffin cups. 3. Cream first 3 ingredients. 2. Mix in milk with a fork until dough sticks together and follows the fork around the bowl. Notes: • This recipe comes from Heidi and Joel Hollingsworth. 3.Breads Baking Powder Biscuits 1 c flour 1/2 t salt 1 1/2 t baking powder 1. 6. Shape into a ball and put on a floured board. Bake 12 to 15 minutes at 375 degrees. 2. Add rest of ingredients (except chocolate chips) and mix.

Bake 35 to 40 minutes at 350 degrees. 3. and salt.Monkey Bread 4 cans biscuits 3/4 c sugar 2 t cinnamon 1 1/2 sticks margarine 1. Line cupcake pan with paper liners. Cream together shortening and sugar. Combine flour. Bring to a boil for 1 minute then pour over biscuit pieces. 5. Add brown sugar mixture. Put remaining cinnamon and sugar mixture into a 1 cup measuring cup. Add eggs and cooled bran mixture. Cut each biscuit into quarters and roll in cinnamon and sugar mixture. 2 eggs 2 1/2 c flour 2 1/2 t baking soda 1/2 t salt 2 c buttermilk 8 . When the oven reaches 400. set aside. Bran Muffins 2 c Kelloggs All Bran cereal 1 c Nabisco 100 1 c boiling water 1/2 c shortening 1 1/2 c sugar 1. Fill each 2/3 full. Combine cereals and boiling water. 6. Notes: • The batter can be stored in the refrigerator for one month so you can bake only as many as you need. baking soda. 4. 2. 5. reduce to 350 and finish baking. 2. Put pans in cold oven set for 400 degrees and the timer set for 20 minutes. set aside. Notes: • A Coleman family tradition on Christmas morning. 3. Place all pieces into 10 inch tube pan. Add flour mixture to bran mixture alternately with buttermilk. 4. • You can “make” buttermilk by adding 2 teaspoons of lemon juice to 2 cups of milk. Melt margarine in sauce pan. Add 1 teaspoon more cinnamon and enough brown sugar to make 1 cup.

Pour about 1/4 cup batter onto a medium hot griddle. 1/4 c plus 2 T milk 1 T soft margarine 1/4 c brown sugar 1 t cinnamon Pancakes 1 c flour 1 T sugar 2 t baking powder 1/4 t salt 1. Flatten with hands until about 1/4 inch thick. Mix in milk with a fork until dough sticks together and follows the fork around the bowl. Fold dough in half and pinch together edges.

With a fork. brush tops lightly with milk. Turn out onto a floured surface. Stir in sugar. cut in small pieces 1/2 c raisins 1 egg.French Bread for Bread Machine 1 c water 1 T butter 1 t sugar 1. 8. Instead. 2. yogurt and lemon peel. make sure to put in small amounts until the batter looks to be the right consistency. Best if served warm with butter and preserves. Transfer to a wire rack to cool 5 minutes. 5. set aside. Sift flour. beaten 1 c (8 oz) plain yogurt Grated peel of 1/2 lemon Milk for brushing on scones 1. 1 t salt 2 c bread flour 1 package (or 2 1/4 t) yeast Fruit Scones 2 1/2 c all-purpose flour 2 t baking powder 1 t baking soda 1/2 t salt 1/2 c sugar 6 T cold butter. Notes: • We often increase the recipe by a half. rub in butter pieces until mixture is crumbly. • These scones freeze very well. Notes: • I always make the mistake of adding all the yogurt at once. Makes a 1 lb loaf. 9. I like to take several out of the freezer. • I made these scones for the first time at Sharon Sauder’s shower in April of 2001. Mix in raisins. Bake 10 to 12 minutes or until scones are well risen and golden. Cut in circles with a 1 . Preheat oven to 425 degrees. With youf fingers. 3. stir in egg. place them in a paper towel. When I do add too much yogurt. Place 1 to 1 1/2 inches apart on baking sheet. baking powder.1 1/2 inch circular cookie cutter. 11 . Blend well to make a dough that barely holds together (you may need to press dough together with your hands). I compensate by adding more flour. 6. 7. baking soda and salt into a large bowl. and microwave them on high for 30 seconds. 4. Add remaining ingredients. 1 can diced tomatoes with juice 2 c frozen corn 1 can black beans. jalepenos. 13 . drained 1/4 c dried cilantro 1 lb medium shells Christmas Eve Pasta 1 T olive oil 4 cloves garlic. Place peas in colander before draining pasta. The boiling water and heat from pasta is enough to heat the peas. If desired.Bow Ties with Spicy Chicken and Broccoli 1 lb bow tie pasta 4 boneless. or one 4-ounce can diced green chili peppers. sprinkle with olives. Heat olive oil and cook chicken mixture and broccoli until browned. stir 1/2 cup of the sauce into chicken. garlic. Makes 4 servings. coriander. and pepper in margarine or butter until onion is tender. Place about 3/4 cup filling atop each tortilla. Stir in broth and chili peppers all at once. Let stand 10 minutes. 6. Stir flour into sour cream. 5. minced 1 t ground coriander 1/4 t pepper 2 T margarine or butter 3 T all-purpose flour 8 oz sour cream 2 c chicken broth 2 seeded and chopped jalapeno peppers. and green onions. 14 . add to onion mixture. covered. Mix with cooked pasta and serve immediately. Remove from heat. uncovered. tomatoes. about 5 minutes. For sauce. in a 350 degree oven for about 35 minutes or until heated through. in a saucepan saute onion. 2 c broccoli 3 T olive oil 1/2 c dry white wine 1/2 c tomato puree Sharon’s Chicken Enchiladas 8 6-inch tortillas 1/2 c chopped onions 4 cloves garlic. skinless chicken breasts 2 t lemon juice 1/4 t ground red pepper 1/4 t ground black pepper 1. seam side down. 4. Cook pasta according to package directions. Sprinkle with remaining cheese. Add wine and puree. roll up. Top with remaining sauce. 2. Wrap torillas in foil. 3. stir in 1/2 cup of cheese. Bake. 3. Heat in a 350 degree over for 10 to 15 minutes or until softened. 5. drained 1 c (4 oz) shredded Monterey Jack cheese 2 c cooked chicken Sliced pitted ripe olives (optional) Chopped tomatoes (optional) Sliced green onions (optional) 1. Arrange rolls. For filling. 4. about 5 minutes more or until cheese melts. Bake. in a lightly greased 12 by 7 inch baking dish. 2. Cut chicken into bite size pieces and mix with lemon juice and pepper. Cook and stir until thickened and bubbly. Simmer for 5 minutes.

Stuff each shell with cheese mixture and place in a 9 by 13 pan. green pepper and onion over medium heat until meat is no longer pink. Cover shells with remaining sauce. cook beef. 4. salt. Notes: • These taste better if you cook and serve them in a blue. 3. Drain spaghetti. Bake 5 minutes longer or until the cheese is melted. Transfer to a greased 13 by 9 inch baking dish. Cook shells according to package directions. 6. chili powder. add to the beef mixture. 5. Meanwhile. pepper. sprinkle with cheese. chopped 1 medium onion. 2. In a bowl. Cook spaghetti according to package directions. 1 t salt 1 t chili powder 1/2 t pepper 1/4 t garlic powder 1/8 t cayenne pepper 3/4 c shredded cheddar cheese Stuffed Shells 1 package jumbo pasta shells 24 oz ricotta cheese 1 egg 1 c shredded mozzarella cheese 1. ceramic dish. drain. Makes 12 servings. mix together the cheeses. Stir in the tomatoes. undrained 1 8 oz can tomato sauce 1 T brown sugar 1. 7. Cover and bake at 350 degrees for 30 minutes. 2. 4. and parsley. egg. chopped 14 1/2 oz can diced tomatoes. Bake for 30 to 45 minutes at 350 degrees. 3. garlic powder and cayenne.Confetti Spaghetti 12 oz package spaghetti 1 1/2 lbs ground beef 1 medium green pepper. Notes: • Sharon discovered this recipe on one of her Wednesday night dinners in the fall of 2001. • The shells won’t stick to the dish if you spread a bit of sauce on the bottom. brown sugar.

Add the chicken and cook. 2. Remove with a slotted spoon and set aside. tomatoes. with their juices. 4 to 6 minutes. pepper.
