Vegetable Spring Rolls

Ingredients •Spring roll wrappers •Onion ,thinly sliced •Spring onions, thinly sliced •Carrots, cut into thin strips •Green capsicum, cut into thin strips •Cabbage, finely shredded •Oil •Salt •White pepper powder •Soy sauce •Bean sprouts •Spring onion greens chopped •Cornflour/corn starch 10 1 medium 2 2 medium 1 medium 1/2 small 2 tablespns + for deep-frying to taste 1/4 teaspoon 1 tablespoon 3/4 cup 2 stalks 1 tablespoon

Method To make the vegetable spring rolls, first heat 2 tbspns oil in a nonstick wok. Add onion, spring onions, carrots, capsicum, cabbage and salt and toss. Add pepper powder and soy sauce and mix. Add bean sprouts and spring onion greens and mix. Cook till the vegetables soften. Take the wok off the heat and set aside to cool. Heat sufficient oil in a wok. Make a paste of cornflour with 2 tbspns water. 1

Cut into smaller pieces and serve. Drain on absorbent paper. 2 . Gently slide into the hot oil and deep fry till golden and crisp.2 Spread the spring roll wrappers on the work top. Apply cornflour paste to open end and seal. Keep the rolls under a damp cloth. Divide the stuffing into 10 portions and place a portion on one side of each wrapper. Fold in the edges and roll tightly.
