These generally appear at the head of a score, or at the beginning
of a new section, if the tempo changes. For instance:

Allegro

fast

Andante medium ('walking') pace

Adagio

slow

There are more, some being refinements that describe the feel
required more precisely:

Andante sostenuto

Con spirito

The tempo might change during the course of the music:

rit. (ritenuto) or rail, (rallentandd)

slow down

accel. (accelerando)

speed up

Many other terms are used for tempo or expression. A cheap,
compact dictionary of musical terms is useful for quick reference.
