Spaghetti Squash Bake Ingredients:

1 Medium Spaghetti Squash (2-3 lb Squash) 1 Lb Ground meat (turkey or beef) I used beef tonight cause I aint scared 1 14 oz can Fire Roasted Tomatoes 1 Large Portabella Mushroom, gills cleaned & julienned cup Dry (not in oil) Sun dried tomato 1 sweet onion thinly sliced cup pasta sauce (make a good choice here, No sugar Organic is best) Extra Virgin Olive Oil Salt and Pepper 1 clove garlic, chopped Butter (Grass Fed Dairy if possible) Fresh Basil

Preheat oven to 400 degrees Cut Squash in half length wise and scoop out seeds. Drizzle with EVO and Salt and Pepper. Lay flat side down on baking sheet and cook 45-60mins (depending on size of squash) until soft to touch but does not collapse, inside edges should brown slightly. While Squash is baking: Caramelize (that means until brown, or technically until sugars are pulled out) onions and mushrooms in medium size saut pan on medium heat with EVO and 1 tbsp of butter. Remove from heat and set aside in heat safe container. Use same pan and cook ground meat until brown. Remove from heat, drain if necessary. Put drained meat back in pan with fire roasted tomatoes, pasta sauce, sun dried tomatoes, garlic, salt and pepper. Bring to a simmer. Remove from heat and add fresh basil. Use a 9x13 baking dish. Scape out squash pulp and spread evenly on bottom of pan. Cover top with onion, mushrooms and meat mix. (Cheese is optional at this point; I would not recommend it because it does not do the body good). Bake at 350 degrees for 20-25 minutes until heated through.
