White Bean, Sausage & Kale Soup 2-3 sausages, turned out of casings 4T olive oil 2 c chopped onions 2 minced garlic

cloves 2 boxes chicken broth 1c white wine ½ t thyme Large bunch kale, cleaned & chopped 1 can white beans

Saute sausage in a stockpot, breaking it up with a spoon until well browned, remove from pot and set aside. Saute onions and garlic in sausage drippings until soft. Add wine, cooking until almost evaporated, then add broth. Stir in thyme and kale. Bring to a boil, reduce heat and simmer 15-20 minutes. Stir in sausage and beans; simmer 20 minutes more and serve
