4 ½ cups flour 6 tbspn cocoa 1 ½ cups sugar 1 cup dessicated coconut 1 ¼ Ib butter 2 cups cornflakes

Icing ½ pkt icing sugar (250g) 2 tbspn cocoa ¼ Ib butter

Method: 1. 2. 3. 4. 5. 6. Beat sugar and butter till creamy Set aside Sift flour and cocoa and mix. Add dessicated coconut and cornflakes Pour ingredients in number 3 to creamy mixture. Mix well until a smooth batter is formed Using a dessert spoon scoop out a spoonful and place on top of greased baking tray. Flatten and repeat till baking tray is full. 7. Bake for 20 minutes at 300 degrees celcius or until depressing dough with finger is firm to the touch. 8. Pour out onto cooling rack and allow to cool completely before storing away in airtight container. To make icing: 1. Sift cocoa and icing sugar.

2. Gradually stir in melted butter and mix to a smooth paste 3. Spread on top of cooled cookie and top with sprinkles of dessicated coconut.
