Coconut and coriander chutney

Ingredients · 1 Cup of Desiccated Coconut · 1 large bunch of fresh Coriander, finely chopped · ½ Thai Chili, finely chopped (use a milder chili if you wish) · 2 Tablespoons of Olive Oil · Juice of ½ Lime · 1 Tablespoon of Agave Syrup · Pinch of Sea Salt

Method Combine all ingredients together except the lime juice and allow to sit for at least 1 hour. Add the lime juice when you are ready to serve. Adding the lime earlier may discolour the coriander.
