a. Mc ch ca trn bt:
- Trn bt m vi nc thnh mt khi bt do.

b. Yu cu ca khi bt sau khi trn:

c. Cch tin hnh:
- Qu trnh trn bt chia lm hai giai on:
+ Trn kh: ri u mt lt bt m, mt lng bt nng theo sut chiu
di trc nho, cho my trn kh trong vng 3 5 pht nhm m bo ng u ca
khi bt.
+ Trn t: sau khi trn bt kh u, cho nc trn bt vo t t, theo dc
chiu di trc nho. Tip tc bt my hot ng, tin hnh nho tip trong 15 20
pht.
- Qu trnh nho trn ch cn m bo cc cu t trn u nhau, nu ko
di thi gian trn s c nhiu khng kh vo khi bt gy hin tng d t khi cn v
gluten hn ch trng n.
- Lng nc nho tnh theo cng thc:
N= B.(W1-W2)/(100-W1)
N, B: lng nc (l) v bt (kg)
W1,W2: m ca bt nho v bt (%)
d. Cc s c v cch khc phc:

2.11 Phn loi kim tra trc khi ng gi: Trc khi bao gi, sn phm cn

ng gi.
2.12 Phn loi bao gi:
- Mc ch bo qun:
+ Trnh vt m ht m t khng kh.
+ Hn ch s xm nhp ca vi sinh vt.
- Hon thin sn phm: tng gi tr cm quan cho sn phm.
- Thun tin cho vn chuyn.
- C hai loi bao b thng s dng: giy king v giy kraft.
+ Giy king: thi gian bo qun 6 thng.
+ Giy kraft: thi gian bo qun 3 thng.
Sau khi ng gi m c xp vo thng, thng c 3 loi thng 30, 50, 100
gi/ thng.
III. MY THIT B DNG TRONG QUI TRNH SN XUT:
1. My trn bt :
1.1 Cu to:
Thit b trn l mt thng nm ngang c np, di khong 1.5 m, rng 0.5 m,
cao khong 0.9 m, lm bng inox, bn trong thng trn c hai trc nm song song
nhau, mt trc t cao v mt trc thp hn trc kia, trn mi trc c cc cnh khuy
c b tr theo kiu xon c, c cnh khuy trn hai trc an xen nhau.
Hai trc chuyn ng ngc chiu nhau nh c cu bnh rng. ng c
truyn ng lm quay mt trc chnh nh dy ai, t trc chnh nh c cu bnh rng
truyn ng lm cnh khuy quay ngc chiu nhau.

2. My cn bt:
Bt sau khi nho trn c x t ci xung thng cha sau c a n h
thng cn nhm cn bt ra thnh cc l bt.
2.1 Nguyn l hot ng: Qu trnh cn chia thnh 2 giai on:
Cn th: bt nho t thng phn phi c a xung 2 cp trc th c
ng knh 300 mm. Vn tc trc cn th nh, to lc nn ln p bt thnh tm a
sang cn tinh.
Cn tinh: h thng cn tinh c 5 cp trc, vn tc chuyn ng gi cc l
tng dn qua cc trc v khong cch gia hai trc ca cc cp trc nh dn, khi y
tm bt qua l bt s c dn mng dn.

2.2 Yu cu k thut:
Vn tc ca l cn tinh: v = 90 130 vng/pht.
Khe h ca cc trc cn nh dn qua cc l trc:

Cn th ( 2 cp trc): L1 = L2 = 5 mm
Bn th ( 1 cp trc): L3 = 4 mm
Bn tinh ( 3 cp trc):
L4 = 3 3,5 mm
L5 = 2 2,5 mm
L6 = 1,2 1,5 mm
Cn tinh ( 2 cp trc)
L7 = 1 1,2 mm
L8 = 0,8 0,9 mm
3. H thng ct si v to sng:

4.1 Cu to:
Bung hp dng hnh hp di 16m, rng 63cm, cao 50cm c lm bng hai
lp inox khng r. Bn trong bung hp, b tr 4 ng ng dn hi c ng knh
5cm, trn ng c cc l nh hng xung di. Cc ng ng ny c t pha di

4.2 Nguyn tc hot ng:

- Ch hp:
+ Nhit : 95-115oC.
+ Thi gian: 1.5-2 pht
+ Yu cu lng hp phi kn trnh tn tht hi tn tht nng lng tn
tht kinh t.
- M sau khi hp s c qut thi c tc dng tn nhit, gim nhit ca si
m v trnh ngng t nc trn b mt si m.
*Lu : Ty theo tc bng chuyn m iu chnh lng hi nc cho ph

5.2 Nguyn tc hot ng:

6. My chin du:
6.1 Cu to:
- Khun chin: c lm bng thp khng r c kch thc 9 12cm c b
tr trn xch ti. Mi hng c 8 khun, trn y khun c khoan l kch thc 2mm
du lu chuyn. Khun chin c gn trn thanh t, thanh t bt ngang qua h thng
xch ti chuyn ng theo hnh dng cho chin. Khi xch ti khun chin vo u
cho chin th c h thng xch ti np khun di chuyn n y ln khun chin. Cu
to h thng xch ti np ging xch ti khun chin nhng di chuyn theo hnh elip.
- Cho chin: Cho chin c dng hnh thang, vt 2 u ging con thuyn c
lm bng thp khng r, di 8m rng 0.9m, cao khong 0.3m. Bn trn cho c np
y, bung t c t thp hn nn nh, l c xy bng gch chu nhit, bn trn
cho chin. Nhin liu dng t cung cp nhit cho cho chin l du FO. Du phi
lun ngp trn vt m t 5-15cm.
6.2 Nguyn tc hot ng:
Bng ti khun m va i vo cho chin lin c bng ti np khun tng t
y li c nh vt m trong qu trnh chin. Vt m i qua du chin c nhit t
150-179oC trong thi gian 125-130 giy. Dng du shorterning chin (v nhit
si cao hn du nn rt ngn thi gian, sau khi chin to s kh ro cho m).

8. My ng gi:
Trc khi bao gi, sn phm cn phi c kim tra v phn loi, loi b nhng
vt m khng tiu chun (b vn, chy kht, vng khng u, khng ng trng
lng) v a vt m t tiu chun chuyn qua ng gi.
8.1 Cu to:
Vi m tm dng gi: S dng my ng gi lin hp - FFS (nh dng, lm
y, hn m) trc ngang. c cu to bng inox.

Vi dng ly: Ly nha c s dng l ly nha bn cng hoc cng c tnh chu
nhit cao. Loi ly nhiu ny c sn xut bng qu trnh c - Injection Moulding.
