1. t vn :
Ngy nay trong thi bui kinh t th trng, khi m con ngi phi chy ua

mt thc n nhanh v ph bin m i a s chng ta thng ngh n. Nn cng
nghip sn xut m n lin ngy cng pht trin khng ch v mt mu m, a dng v
chng loi m cng ngh sn xut cng ngy cng c ci tin nng cao nng sut
v cht lng sn phm. T p ng nhu cu ngy cng cao ca ngi tiu dng v
gi tr dinh dng cng nh tnh thun tin khi s dng v bo qun.
2. Ngun gc:
M n lin bt ngun t cc loi m ramen Nht do ng And Momofuku pht

mt ngi mt nm. Tip theo l Indonesia 55 gi v Nht Bn 42 gi.

Thuyt minh qui trnh:

2.1 Chun b nguyn liu:


y l qu trnh ha tan cc ph gia vo nc, to thnh mt dung dch ng
nht, khng vn cc, khng to mng, ko vng.
Cc cht ph gia nh ng, mui, bt ngt, bt sp, cht mu, cht to dai
u c cn nh lng theo ng thc n trc khi vo bn chun b nc trn
bt. Cc thnh phn ph gia c ha tan bng nc nng trong thng cha nc trn
bt, sau thm nc va cho mi m bt nho.
Ly nc theo t l qui nh vo bn trn, bt cng tc cho cnh khuy lm
vic ri t t cc cht ph gia trn vo. nh trn trong 15 pht ri tt cnh khuy.
Ly dung dch i kim tra nng . Nu dung dch t yu cu th yn bn nc
trn 2 gi trc khi em nho bt.
Yu cu ca nc trn:
+ Ha cht phi c cn theo ng t l
+ Dung dch phi ng nht, khng vn cc, khng to mng, ko vng
Trc khi em dung dch i nho bt, cn bt cnh khuy tr li m bo
s ng nht ca dung dch.
Nguyn liu chnh sn xut m n lin l bt m (82 84%), ngoi ra cn
phi trn thm tinh bt gim gi thnh sn phm v tng dai cho si m.
2.2 Trn bt:
Trn bt l khu quan trng ca qu trnh sn xut. Yu t ch yu hnh thnh
nn khi bt nho l do protein ht nc trng n to thnh gluten, m cu trc
gluten nh mt ci khung gm nhiu mng kt li trong khi bt; cc mng kt
dnh cc ht bt b trng n. tng kt dnh ca tinh bt vi mng gluten,
lm cho bt nho dai v n hi cn phi nho lu v mnh.

a. Mc ch ca trn bt:
- Trn bt m vi nc thnh mt khi bt do.
- Ha tan cc cht ph gia nh ng, mui ng thi phn tn chng
u khp trong bt nho, lm cho khi bt nho tr thnh mt khi ng nht.
b. Yu cu ca khi bt sau khi trn:
- m 30 33%
- t ng u cao, khng vn cc ln, trng thi bi ri khi nm nh
bt trong tay, m tay ra bt khng ri rc, dnh tay, bt mm do.
c. Cch tin hnh:
- Qu trnh trn bt chia lm hai giai on:
+ Trn kh: ri u mt lt bt m, mt lng bt nng theo sut chiu
di trc nho, cho my trn kh trong vng 3 5 pht nhm m bo ng u ca
khi bt.
+ Trn t: sau khi trn bt kh u, cho nc trn bt vo t t, theo dc
chiu di trc nho. Tip tc bt my hot ng, tin hnh nho tip trong 15 20
pht.
- Qu trnh nho trn ch cn m bo cc cu t trn u nhau, nu ko
di thi gian trn s c nhiu khng kh vo khi bt gy hin tng d t khi cn v
gluten hn ch trng n.
- Lng nc nho tnh theo cng thc:
N= B.(W1-W2)/(100-W1)
N, B: lng nc (l) v bt (kg)
W1,W2: m ca bt nho v bt (%)
d. Cc s c v cch khc phc:
- Khi trn bt bao gi cng c mt lng khng kh ln vo bt nho.
Lng khng kh ny c nh hng xu ti s trng n gluten, lm cho si m b t
khi to hnh bng my n p.
- Bt nho b nho: bt s kh cn, bng trn vt m kht, du khng ngm
u khi chin, lm cho vt m b m.

=> Khi thy bt nho b nho do cho lng nc trn bt qu mc cn


thit, th ta cn cho bt vo thm kt hp vi nh trn cho n khi bt va.
- Bt nho b kh: lm cho bt d b t khi cn => Thm nc trn bt

2.3 Qu trnh cn-ct si:
a. Mc ch ca qu trnh cn:
- Nhm chuyn bt nho t trng thi bi ri thnh tm bt c dy u
n.
- Lm ng nht khi bt v tng n hi cho khi bt nho v gim
lng khng kh ha ln trong bt nho.
- Khi i qua cc l cn bt tm bt s c nn cht thnh l d to
hnh. ng thi c tc dng dn l bt n thit b ko si.
b. Yu cu ca l bt sau khi cn:
- Sau khi ra khi trc cn bt cn c b mt tng i mn, dy ng
u.
- L bt mng, mm, xp, khng rch, khng b lm m (do c ln bt
kh vo).
- Khng c l xp, b mt lng u, trng ng.
- Kch thc ca l bt mng dn khi qua cc trc cn, l bt qua trc cn
tinh dy khong 0,8 1,2 mm.

c. Cc s c v cch khc phc:


- Bt nho khi cn b nng, nu bt kh khi cn d t tm => iu chnh
khu trn.
- Cc l trc chuyn ng khng u, gy ra s c b n tm bt hoc b
t l bt => iu chnh li vn tc cc l.
- L bt b rch 2 bn mp => iu chnh 2 bn.
- Bt dnh l cn => cn xem li no.
2.4 Ct si n bng:
a. Mc ch ca qu trnh:
- To hnh dng, kch thc c trng cho si m n lin.
- To bng lm tng gi tr cm quan ca vt m.
b. Yu cu:
- Si m lng, khng b rng ca.
- Si m ri, to thnh gn sng vi khong cch gn u nhau.
- B mt si m lng, mn
- Si m c ng knh d= 0,8 1mm
c. S c v cch khc phc:
- Chp si v ri s m: do b phn lc khng t st vo b mt trc dao.
- Dn si m thp: do chnh lch vn tc m ra khi dao ct v vn tc
bng chuyn nh.

- M khng t hn: do khe h gia 2 trc dao nh hn khng nhiu so vi
l bt, c th khc phc bng cch iu chnh khe h.
- Si m khng bng => kim tra li cc rnh trn dao ct.
2.5 Hp v lm ngui:
a. Mc ch:
- Nhm h ha b mt si m.

- Nhm bin tnh protein gim va nt ca si m.


- Tng dai ca si m trong nc si, tng bng.
- Lm si m vng hn.
- Rt ngn thi gian chin.
b. Yu cu:
- Si m vng hn, dai hn, mm hn.
- Sau khi hp si m chn u 80-90%.
- Si m khng b bin dng, khng b nho, khng b kt dnh li trn bng
ti.
c. Cc s c v bin php khc phc:
- Hp chn qu : do ko di thi gian hp, p lc hi cao kh o m =>
bin php x l: tng vn tc ca bng chuyn, gim thi gian hp hoc gim p lc
hi.
- M sng: do thi gian hp ngn, p lc hi khng do thiu nc l hi
s lm cho vt m xp, si m b => Gim vn tc ca bng chuyn tng thi gian
hp hoc thm nc vo l hi tng p lc.
- Li hp hng do hng bc n, li b c thng hp => thay li.
* Thi ngui: Sau khi ra khi bung hp, si m c qut gi thi ngui
gim nhit xung n thi lm kh si m, to iu kin thun li cho cc cng
on sau.
2.6 Ct nh lng:
a. Mc ch:
- m bo ng khi lng.
- Chiu di si m ng quy nh.
b. Yu cu:
- Ty theo mc ch m si m c kch thc 20-25cm.
- Chiu di v trng lung m sau khi ct phi m bo ng u v ng
quy nh.

2.7 Nhng nuc lo-lm ro:


a. Mc ch:
- To hng v c trng cho sn phm.
- To cho si m c cht lung cao hn.
b. Yu cu:
- Nc lo phi ngm u trong vt m.
- Sau khi qua nc lo, si m phi mm, khng b bin dng.
c. Cch tin hnh : Sau khi hp v thi ngui m c xu hung ho nc,li
dng iu ny ngi ta a si m qua cc cht ph gia trong thi gian 15-20 giy
tng v ngt v mn cho thch hp.
2.8 To khun cho vt m:
a. Mc ch: To hnh dng v kch thc nht nh cho vt m.
b. Yu cu:
- Vt m vung vn v u n.
- Si m bong ln lm du d len vo khi a vo chin.
2.9 Chin:
a. Mc ch:
- Nhm thun li cho qu trnh bo qun m (do qu trnh chin tiu dit
phn ln vi sinh vt, loi bt nc).
- Thay th mt phn nc bng mt lng cht bo thch hp nhm lm
tng gi tr dinh dng to mu, mi thm, v c trng cho vt m.
b. Yu cu ca vt m:
- Vt m sau khi chin c m <4,5%.
- Mu vng u, khng c m trng qu 2cm, m khng chy kht, gy
nt, khng c mi v l.
- Hm lng cht bo tng, c mi v c trng ca m n lin.

c. Cc bin i xy ra trong qu trnh chin vt m:


- Giai on 1: Nhit ca m thp hn so vi nhit ca du rn, trong
m c s tng nhit hng ti cn bng nhit u. giai on ny b mt ngoi
trng thi ca vt m cha c s bin i ln lm nhng bn trong di tc dng ca
nhit cao c s thay i, du bt u thm vo bn trong si m.
- Giai on 2: Th tch ca si m tng do tinh bt trng n, nc trong
m bt u bay hi v du t bn ngoi thm vo mnh hn trong cc si m. Do b
mt nc nn cui thi k ny th tch ca m gim xung.
- Giai on 3: Giai on ny xy ra mnh m s bay hi nc lm cho
hnh dng si m gim xung to nn nhng khong trng mi cho du thm vo nhiu
hn.
- Giai on 4: Hnh dng ca sn phm bin i su sc. Cc cht b phn
hy lm cho sn phm tr nn kh, gin.
- Giai on 5: Giai on ny sy ra nhiu bin i v tnh cht ha hc:
+ ng: ng c sn trong m cng vi lng ng do dextrin to ra
s b gim do tham gia phn ng Caramel, Maillard:
ng kh + acid amin mailanoit (c mu, mi c trng)

2.10 Lm ngui:
a. Mc ch: Sau khi chin, m theo bng ti vn chuyn theo hng ln cao
thu hi lng du h trong m v tip tc a vo h thng thi ngui h nhit
ca vt m n nhit mi trng. Ngoi ra giai on thi ngui ny cn c tc
dng lm kh du trn vt m, ko di thi gian bo qun.
b. Yu cu:
- m bo nhit ca vt m nhit tng ng nhit mi trng.

- B mt vt m kh, ro.
2.11 Phn loi kim tra trc khi ng gi: Trc khi bao gi, sn phm cn
phi c kim tra v phn loi, loi b nhng vt m khng t tiu chun (b vn,
chy kht, vng khng u, khng ng trng lng). a vt m t chuyn qua
ng gi.
2.12 Phn loi bao gi:
- Mc ch bo qun:
+ Trnh vt m ht m t khng kh.
+ Hn ch s xm nhp ca vi sinh vt.
- Hon thin sn phm: tng gi tr cm quan cho sn phm.
- Thun tin cho vn chuyn.
- C hai loi bao b thng s dng: giy king v giy kraft.
+ Giy king: thi gian bo qun 6 thng.
+ Giy kraft: thi gian bo qun 3 thng.
Sau khi ng gi m c xp vo thng, thng c 3 loi thng 30, 50, 100
gi/ thng.
III. MY THIT B DNG TRONG QUI TRNH SN XUT:
1. My trn bt :
1.1 Cu to:
Thit b trn l mt thng nm ngang c np, di khong 1.5 m, rng 0.5 m,
cao khong 0.9 m, lm bng inox, bn trong thng trn c hai trc nm song song
nhau, mt trc t cao v mt trc thp hn trc kia, trn mi trc c cc cnh khuy
c b tr theo kiu xon c, c cnh khuy trn hai trc an xen nhau.
Hai trc chuyn ng ngc chiu nhau nh c cu bnh rng. ng c
truyn ng lm quay mt trc chnh nh dy ai, t trc chnh nh c cu bnh rng
truyn ng lm cnh khuy quay ngc chiu nhau.

Pha trn song song vi hai trc cnh khuy l mt ng hnh tr c ng

gip bt c nho trn u. Khi bt c trn thi gian v t yu cu cng
nhn ng my s gt cn tay m y thng, tho bt xung mm phn phi. Thit

2. My cn bt:
Bt sau khi nho trn c x t ci xung thng cha sau c a n h
thng cn nhm cn bt ra thnh cc l bt.
2.1 Nguyn l hot ng: Qu trnh cn chia thnh 2 giai on:
Cn th: bt nho t thng phn phi c a xung 2 cp trc th c
ng knh 300 mm. Vn tc trc cn th nh, to lc nn ln p bt thnh tm a
sang cn tinh.
Cn tinh: h thng cn tinh c 5 cp trc, vn tc chuyn ng gi cc l
tng dn qua cc trc v khong cch gia hai trc ca cc cp trc nh dn, khi y
tm bt qua l bt s c dn mng dn.

2.2 Yu cu k thut:
Vn tc ca l cn tinh: v = 90 130 vng/pht.
Khe h ca cc trc cn nh dn qua cc l trc:

Bn th ( 1 cp trc): L3 = 4 mm
Bn tinh ( 3 cp trc):

ti ny, si m rt xung bng ti th hai chuyn si m vo bung hp. Bng ti th
hai ny chy vi vn tc 20cm/giy. Vn tc ny nhanh hn so vi bng ti th nht
nn gip ko gin si m n bng ra to thnh dn sng ln th hai theo phng
ngang.
4. My hp m lin tc:

4.1 Cu to:
Bung hp dng hnh hp di 16m, rng 63cm, cao 50cm c lm bng hai
lp inox khng r. Bn trong bung hp, b tr 4 ng ng dn hi c ng knh
5cm, trn ng c cc l nh hng xung di. Cc ng ng ny c t pha di
bng ti v gi l ng ng ph dn hi nc t ng chnh n bung hp ca mi
dy chuyn sn xut m. ng ng chnh dn hi nc t bn hi nc bo ha n
cc ng ng ph. u vo v u ra ca bung hp c ct dn hi nc thot ra.
4.2 Nguyn tc hot ng:
- Bng ti m chy trong bung hp, pha trn ng ng dn hi. Hi nc
t ng ng qua cc l nh thot ra xung y bung hp ri ta u khp bung
hp.
- Ch hp:
+ Nhit : 95-115oC.
+ Thi gian: 1.5-2 pht
+ Yu cu lng hp phi kn trnh tn tht hi tn tht nng lng tn
tht kinh t.
- M sau khi hp s c qut thi c tc dng tn nhit, gim nhit ca si
m v trnh ngng t nc trn b mt si m.
*Lu : Ty theo tc bng chuyn m iu chnh lng hi nc cho ph
hp, m bo nhit n nh cho si m chn u.
5. My ct nh lng:
5.1 Cu to: Gm:
- Mt cp trc quay ngc chiu nhau
- Trc trn gn li dao bng inox
5.2 Nguyn tc hot ng:

M sau khi thi ngui theo bng chuyn n dao nh hng. Dao chuyn ng
trn to theo hng vung gc vi bng ti v ct m thnh cc on bng nhau, c th
iu chnh tc ca dao ct theo tng loi m 35-40 vng/pht c cc on m c
kch thc 20-25cm.

5.3 Yu cu:
Nht ct gn, ct la ln m thnh vt, chiu di vt m sau khi ct phi ng
vi trng lng yu cu ca vt m.

6. My chin du:
6.1 Cu to:
- Khun chin: c lm bng thp khng r c kch thc 9 12cm c b
tr trn xch ti. Mi hng c 8 khun, trn y khun c khoan l kch thc 2mm
du lu chuyn. Khun chin c gn trn thanh t, thanh t bt ngang qua h thng
xch ti chuyn ng theo hnh dng cho chin. Khi xch ti khun chin vo u
cho chin th c h thng xch ti np khun di chuyn n y ln khun chin. Cu
to h thng xch ti np ging xch ti khun chin nhng di chuyn theo hnh elip.
- Cho chin: Cho chin c dng hnh thang, vt 2 u ging con thuyn c
lm bng thp khng r, di 8m rng 0.9m, cao khong 0.3m. Bn trn cho c np
y, bung t c t thp hn nn nh, l c xy bng gch chu nhit, bn trn
cho chin. Nhin liu dng t cung cp nhit cho cho chin l du FO. Du phi
lun ngp trn vt m t 5-15cm.
6.2 Nguyn tc hot ng:
Bng ti khun m va i vo cho chin lin c bng ti np khun tng t
y li c nh vt m trong qu trnh chin. Vt m i qua du chin c nhit t
150-179oC trong thi gian 125-130 giy. Dng du shorterning chin (v nhit
si cao hn du nn rt ngn thi gian, sau khi chin to s kh ro cho m).

7. H thng bng ti lm mt v thay khun:
7.1 Nguyn tc hot ng:
Sau khi qua du trong cho chin, xch ti khun chin v np y tch ra
cui cho chin vt m ri xung bng ti khc vo bung lm ngui. Bung lm
ngui l bung hnh ch nht bng tn trng km, c b tr qut thi lm ngui
vt m. Sau khi chin, pha trn bung lm ngui c ng thot hi nng. Qut thi
c b tr thi t di bng ti ln.
H thng t ng thay khun, thay n gin thun tin, qua vic thay i mt
khun c th sn xut nhiu sn phm m n lin khc nhau.
7.2 Yu cu:
+ Vt m t tiu chun c hnh dng nguyn vn, khng ng du khng v
nt.
+ Nhit vt m sau khi lm ngui khong 30-40oC
+ Thi gian lm ngui t 1.5 2 pht.

8. My ng gi:
Trc khi bao gi, sn phm cn phi c kim tra v phn loi, loi b nhng
vt m khng tiu chun (b vn, chy kht, vng khng u, khng ng trng
lng) v a vt m t tiu chun chuyn qua ng gi.
8.1 Cu to:
Vi m tm dng gi: S dng my ng gi lin hp - FFS (nh dng, lm
y, hn m) trc ngang. c cu to bng inox.

8.2 Nguyn l hot ng:
Vt m t tiu chun c xch ti a vo my ng gi. Ti my ng gi
lin hp, bao b bng giy king hoc giy kraft bao quanh vt m v c ghp m
bng nhit dc theo vt m. Vt m c ng thi ghp m ngang v ct thnh tng
gi m n l.
