Salted Codfish Cakes

Ingredients 1 cup flour 2 teaspoons garlic powder 3/4 teaspoon baking powder Salt to taste 1 Scotch Bonnet chili, chopped (optional) 3 scallions, chopped 1 tomato, chopped 1 egg, beaten 1/2 pound salt cod 1/4 cup water Oil for frying Directions Soak salt cod for at least 5 hours, or overnight, changing water several times, prior to cooking. Shred fish and debone if needed after soaking Mix flour, garlic powder, baking powder and salt in a bowl. Add chili, scallions, tomato and stir in beaten egg. Add codfish and enough water to make the mixture a thick runny batter. Heat oil (1/4 to 1/2 cup) on medium heat, then using a tablespoon drop batter in hot oil to fry, turning as needed to provide even cooking and colour for approximately 3-5 minutes. Remove from heat and place on paper towel to drain oil and then serve.
