ALLA CARBONARA (With Bacon) 2 lb. spaghetti 2 tbsp. olive oil 5 oz.

thick sliced or chunk bacon, cut to cubes 3 tbsp. butter 4 eggs, beaten 1/2 c. heavy cream 1/2 c. grated Parmesan cheese Salt & pepper to taste Start the spaghetti cooking in boiling water while browning bacon in oil. Drain cooked bacon and set aside. In bowl, mix eggs, pepper, salt, cream and Parmesan cheese. In large skillet, melt butter over low heat. When butter becomes golden in color, add egg mixture. When mixture begins to thicken, add drained cooked spaghetti and the browned bacon. Quickly mix and serve. Sprinkle additional Parmesan cheese on top. Serves 6. OR PASTA CARBONARA OR SPAGHETTI AND BACON 3/4 lb. thin spaghetti 1/4 lb. bacon 2 eggs 2 tbsp. light cream 2/3 c. freshly grated Parmesan cheese Black pepper, freshly ground Cut bacon into one inch lengths and fry until crisp, drain. Cook spaghetti in boiling salted water. Meanwhile, combine eggs, cream, half the Parmesan cheese, and a generous amount of black pepper. Drain spaghetti after 10 minutes. Quickly add cheese and egg mixture to spaghetti, stirring quickly. When thoroughly mixed, add bacon and serve. OR PASTA CARBONARA 1/4 c. heavy or whipping cream 4 eggs 1/2 lb. bacon, diced 1 green pepper, seeded & diced 1 lb. fettucini or linguini 1 tsp. olive oil 1/4 cup chopped fresh parsley Salt 1/4 c. butter Parmesan-Romano cheese, grated Grated pepper Sprinkle of salt Set cream and eggs out of refrigerator to room temperature. In a skillet, fry diced bacon until crisp. Remove bacon and drain on paper toweling. Reserve 2 tablespoons of bacon fat in skillet. Saute diced green pepper in reserved bacon fat in skillet.
