Two-Nut Biscuits

© Penny Peberdy June 2013 Ingredients 100g unsalted butter 110g soft brown sugar 1 large egg 175g SR flour 25g walnuts, chopped 2 dessertspoons smooth peanut butter

Pre-heat the oven to 200°C Cream together the butter and sugar Add the peanut butter and egg and mix again Add the flour and mix slowly until incorporated. Mix in the walnuts gently with a large metal spoon. Prepare a baking sheet with non-stick paper. Use a teaspoon to put walnut-sized mounds on the sheet, spacing well apart to give the biscuits room to spread. (I can get 9 biscuits on one 12" square baking sheet.) Bake for approx 10 - 12 minutes or until the biscuits are golden. Cool on a rack. Store in an airtight container.
