Vegetable Biryani

Vegetable Biryani: T his is a very exotic rice dish with spicy vegetables. T he rich aroma makes this dish very inviting among kids n all. Also, this biryani is a special dish on party occasions and goes very well with onion raita or any curries. T his is a complete meal in itself and healthy as it has all the vegetables required and takes very less ef f ort to prepare. Glad to share this delicious vegetable biryani recipe with you!!!

Ingredients:

Raw rice Oil Ghee Onion Tomato Carrot Potato Beans Peas Green chilly Ginger garlic paste Cinnamon Cloves Saunf Cumin Black pepper pwd Red chilly pwd Garam masala pwd Yoghurd

- 2 cup - 3 tbsp - 1 tbsp -2 -2 -1 -1 - 50 g - cup -2 - 1 tbsp -1 -3 - tsp - tsp - tsp - 1 tsp - 1 tsp - small cup

Mint leaves Cashew Coriander leaves Salt to taste

Method:

1. Wash rice and soak in water f or 10 mins. 2. Drain and keep aside. 3. Heat oil in a f rying pan 4. Saut cinnamon, cloves, saunf , cumin f or half a minute. 5. T hen add chopped onion and f ry till the color changes to pink. 6. Add green chillies, ginger garlic paste, black pepper pwd and saut f or a minute. 7. Add salt and red chilly pwd, garam masala pwd and stir well. 8. Add f inely chopped tomatoes and f ry till they are cooked. 9. Add all the chopped thin pieces of vegetables and green peas and f ry . 10. Next add yoghurd and stir well. 11. Turn of f the f lame. 12. Heat a tbsp ghee in a pressure pan. 13. Add rice and saut f or a minute. 14. Add the above veg mixture and combine well. 15. Sprinkle f inely chopped mint leaves and saut f or a minute. 16. Add 3 cups of water and combine. 17. Pressure cook f or 1 whistle and simmer f or 5 mins. 18. Once the pressure goes of f , open the lid and mix well with very light hands. 19. Decorate with golden roasted cashew and f resh coriander leaves.

20. Serve hot with onion raita:)
