Boti Kebab

Ingredients Mutton leg deboned (cut into 1 cubes) Salt Malt vinegar Raw papya paste Butter Marinade : Yoghurt Ginger & garlic paste Red chilly paste Garam masala paste Groundnut oil Orange colour Salt

1000gms t/t 60 ml 10 gms 25 gms 200gms 60 gms(1:1) 30 gms 30 gms 50 ml 10 ml as reqd

Method Rub boti with papya paste ,vinegar & salt and keep aside for 30 min. Prepare the marinade and keep the mutton leg in the marinade for 08 hours. Skewer and roast in the tandoor for 18 20 min. Remove, hang the skewer for4-5 min,baste & roast for another 2-3 min. Garnish & serve hot.
