Cassava Cake Filipino Recipe Ingredients: 2 lbs grated cassava 3 eggs 1/2 can condensed milk 1/2 can evaporated milk

1/4 cup melted butter 1/3 cup grated cheddar cheese 1 cup sugar 1 can coconut milk 1 tsp vanilla extract For the topping: 1 can condensed milk 3 egg yolks 1/3 cup coconut cream ½ cup grated cheddar cheese Cooking Directions: 1. Preheat your oven to 180 C (350 F). Grease a 9”x13” baking tray. 2. In a mixing bowl, add the cassava, melted butter, evaporated milk, condensed milk, cheese, eggs, vanilla and sugar. Mix all the ingredients thoroughly until you reach an even consistency. 3. Add the coconut milk, and pour the batter in the baking tray. 4. Bake for 45 to 50 minutes. Make sure the top is firm. Take out of the oven and set aside. 5. Prepare the topping by mixing all the ingredients together in a pan over medium heat. Stir constantly until it becomes thick. Let it simmer for about a minute. 6. Pour the topping over the cake. Spread it evenly with the use of a spatula. 7. Put in the oven again and bake for another 15 minutes, or until the top turns golden brown. 8. Let it cool off before you cut and serve. 9. Enjoy! Potato Salad Ingredients: 3 cups potatoes, diced 2 teaspoons garlic 1/2 cup sour cream 1/4 teaspoon pepper 1/2 cup mayonnaise 1 cup cheddar cheese, grated 1 tablespoon kalamansi juice 1/3 cup onions, finely chopped Salt How to make Potato Salad Combine sour cream, mayonnaise, kalamansi juice, finely chopped onion, garlic, salt and pepper. Add diced potatoes and sliced pepperoni. Toss to coat evenly chill. Serve sprinkled with finely grated cheese. Yield: 8 servings.
